Who wants dinner on the table in under 20 minutes and costs less than $10 to serve 4-6? This is the recipe for you.

This is one of my favourite pasta sauces served through large pasta shapes (so teh baby can devour them – he loves this!) or through zucchini noodles.  It is so versatile and makes a great pizza base sauce too.

This is enough sauce for 500-600g of pasta (even more if like a less “saucy” pasta). This makes a great amount for large families or large dinner parties. Serve with salad and garlic bread to stretch it further if needed.

This sauce is perfect for the freezer so if you wont use it all in one serving simply freeze in portions and thaw and reheat as required. It makes cooking a last minute dinner very easy.

Amatriciana Sauce – TMX

Ingredients

Scale
  • 500600g pasta of choice, cooked according to packet
  • 800g tinned whole tomatoes
  • 1 large onion, peeled and quartered
  • 3 garlic cloves, peeled
  • 5 shortcut rashers of bacon, diced
  • 1 small mild chilli
  • 10g oil
  • Salt and Pepper, to taste

Instructions

  1. Place tomatoes into bowl.
  2. Blitz on speed 8 for 10 seconds. Place into a bowl and set aside.
  3. Place onion, chilli and garlic into bowl.
  4. Blitz on speed 7 for 5 seconds. Scrape down.
  5. Add oil and bacon.
  6. Cook for 5 minutes, speed 2 at 100 degrees.
  7. Add remaining ingredients.
  8. Cook for 15 minutes, speed 2 at 100 degrees.
  9. Stir sauce through cooked and drained pasta.
  10. Serve.

Notes

  • You can use pancettaor salami for this recipe.
  • For a more cost effective option you can use jarred crushed garlic and dried chilli flakes in this recipe.

Ingredients

Scale
  • 500600g pasta of choice, cooked according to packet
  • 800g diced tomatoes or passata
  • 1 large onion, diced
  • 3 garlic cloves, crushed
  • 5 shortcut rashers of bacon, diced
  • 1 small mild chill, finely diced
  • 10g oil
  • Salt and Pepper, to taste

Instructions

  1. Place tomatoes into a blender and process until smooth if you are wanting a smooth sauce. If not, use as is.
  2. Place oil, onion, chilli, bacon and garlic into a frying pan over a medium heat. Cook until softened and fragrant. Approximately 5 minutes. Stir often.
  3. Add remaining ingredients.
  4. Cook for 15 minutes on a low heat, stirring often.
  5. Stir sauce through cooked and drained pasta.
  6. Serve.

Notes

  • You can use pancetta or salami for this recipe.
  • For a more cost effective option you can use jarred crushed garlic and dried chilli flakes in this recipe.

    Made this week to go with home made pasta – very easy to make, quick & tasty. I added 1/4tsp crushed chilli instead which was enough to give a nice flavour & suit a 2 year old.

    Quick, easy and super delicious!! Perfect for Sunday nights or when you just need a quick meal. This is now a staple in my house. I made it exactly as per the recipe and it was yummo!!

    I really loved this and will be using it as my basic pasta sauce base from now on. I used half a chilli but will go the whole one next time and I also added some fresh herbs from the garden. Next time I will add some prawns too. Super fast and yum! Thanks Peta 🙂

    I love this pasta sauce. So tasty. I’ve even made it minus bacon (when I have had none on hand) and minus chilli (as kids aren’t a fan) and it’s still delicious. Freezes well too.
