Its been awhile since I last made these. My boys used to love these when they were toddlers. This was the first muffin they were introduced to from memory.

The 3 year old loves these, the 5 year old isn’t to fussed either way and the partner says they are ok.

These can be frozen and popped in the lunchbox to thaw.

Because there is no dairy and no added fat the texture is slightly different to standard muffins. Be sure to use muffin cases or grease the muffin tin well to avoid sticking.

Apple and Sultana Muffins

A great first muffin for baby.


Ingredients

Scale
  • 1 apple, quartered and core removed
  • 300g pureed apple
  • 50g sultanas
  • 330g self raising flour
  • 3 eggs
  • 1 teas cinnamon

Instructions

  1. Preheat oven to 180 degrees. Line a muffin tray with patty cases. This makes 18 small sized muffins.
  2. Place apple into the bowl. Turbo three times. Scrape down.
  3. Add remaining ingredients.
  4. Blitz on speed 4 until combined.
  5. Pour into patty cases.
  6. Bake for 15-20 minutes.
