Yum yum yum yum yum. Did I say yum? The goodness of a muffin and an apple crumble all in one. YUM!

These are such a nice muffin to have on hand when visitors pop in. They look impressive but they are incredibly quick and easy. I love freezing these and then simply warming in the microwave or oven to warm through just before guests arrive.

You would almost mistake these for a delicious apple doughnut thanks to the delicious sugar and cinnamon crumble. I hope you love my Apple Crumble Muffins as much as we do.

Apple Crumble Muffins

Ingredients

Apples

  • 2 large pink lady apples, peeled and cored and small dice
  • 2 Tbsp of water
  • 1 tsp ground cinnamon

Muffin base

  • 90g sugar
  • 75g wholemeal self raising flour
  • 230g self raising flour
  • Pinch of baking powder
  • 200g milk
  • 90g butter, melted
  • 2 eggs
  • 1 tsp vanilla extract or 1/2 tsp vanilla powder

Crumble

  • 40g plain flour
  • 50g brown sugar
  • 40 g butter
  • 1 tsp ground cinnamon

Instructions

Apples

  1. Add apple ingredients into microwave safe bowl.
  2. Cook on medium for 2 minutes.
  3. Alternatively, cook in a small saucepan over medium heat until softened slightly.

Crumble

  1. Meanwhile place crumble ingredients into a large bowl.
  2. Using your fingers tips rub the ingredients together to form a breadcrumb like texture.
  3. Set aside.

Muffins

  1. Preheat oven to 180 degrees.
  2. Line muffin tin with muffin cases.
  3. Add apples, any liquid from apples and remaining ingredients into a large bowl.
  4. Mix until just combined. Don’t over work mixture.
  5. Pour mixture into muffin cases. Fill to 3/4 of the way up the case.
  6. Sprinkle entire top of muffin with the crumble coating.
  7. Bake for 18-30 minutes at 180 degrees until your crumble is golden and crunchy. This will completely depend on your oven and size of cake.

  • 2 Tbsp of water
  • 1 tsp ground cinnamon

Muffin base

  • 90g sugar
  • 75g wholemeal self raising flour
  • 230g self raising flour
  • Pinch of baking powder
  • 200g milk
  • 90g butter, melted
  • 2 eggs
  • 1 tsp vanilla extract or 1/2 tsp vanilla powder

Crumble

  • 40g plain flour

  2. 5 minutes/100 degrees/speed 2.
  3. If there is excess liquid, do not discard. This gives great flavour to the muffins.

Crumble

  1. Meanwhile place crumble ingredients into a large bowl.
  2. Using your fingers tips rub the ingredients together to form a breadcrumb like texture.
  3. Set aside.

Muffins

  1. Preheat oven to 180 degrees.
  2. Line muffin tin with muffin cases.
  3. Add remaining ingredients into tmx bowl.
  4. Mix on speed 4 until just combined. Only a few seconds. Don’t over work mixture.
  5. Pour mixture into muffin cases. Fill to 3/4 of the way up the case.
  6. Sprinkle entire top of muffin with the crumble coating.
  7. Bake for 18-30 minutes at 180 degrees until your crumble is golden and crunchy. This will completely depend on your oven and size of cake.

    WOW these are so yummy and a very good way to use up some apples. Thank you for another yummy recipe.
    Well worth a true super easy to make and eat.
