Bacon and Tomato Pasta Sauce

This is such a versatile sauce full of flavour and lots of hidden vegetables. It’s great as a pasta sauce. Serve it over pasta for an easy meal.

It also makes a great pizza base sauce or for sauce to go on your scrolls with some cheese, spinach and capsicum. 

I make up a batch when I have veggies to use up and then I freeze it. It’s a very quick meal for those hectic nights.
 

Bacon and Tomato Pasta Sauce

Ingredients
  1. 10g oil
  2. 8 slices of shortcut bacon, cut into chunks (use less if you don't want a strong bacon flavour)
  3. 1 onion, peeled and quartered
  4. 2 cloves of garlic, peeled
  5. 1 zucchini, diced
  6. 3 carrots, diced into small pieces
  7. 60g spinach leaves
  8. 600g tinned diced tomatoes
  9. 80g tomato paste
  10. 1-2 tablespoons vegetable stock concentrate, to taste
  11. 1 tmx measuring cup of water
  12. 1/4 bunch of parsley, roughly broken up with fingers
Instructions
  1. Place onion, bacon and garlic into bowl.
  2. Blitz on speed 8 until fine.
  3. Scrape down.
  4. Add oil.
  5. Cook for 5 mins on steaming temperature, speed 2.
  6. Add zucchini, carrot, tomatoes, water, stock and paste.
  7. Cook for 15 mins on steaming temperature, speed 2.
  8. Add parsley and spinach. If you find it's very thick, thin it with one tmx measuring cup of water. It's dependent on your tastes.
  9. Cook for 3 mins on steaming temperature, speed 2.
  10. Once done slowly blitz up to speed 9. Blitz for 25 seconds until smooth.
  11. Serve over pasta or as a pizza base sauce.
Notes
  1. Those with a Thermomix will know their steaming temperature as Varoma temperature. Other machines will know it as the steaming or ST temperature.

    Honestly this was just way too easy and tasty + hidden veggies = win all around! my boyfriend was most impressed when I whipped this up out of nowhere on Friday night (trying not to spend money on takeaway) and we will use the left overs for pizza sauce and think they will taste the best ever!
