This morning on our Facebook Page I asked what soup recipe of four you wanted posted and this was the winner… I think. There were quite a few responses to sift through. All recipes will be posted over the next few weeks.

I’m addicted to bacon and red lentils so this is a match made in heaven. I loooooooove this soup. What I love most is it can be as thin or as thick as you like. Simply add more potato or lentils to thicken it up or thin it with extra stock. It can suit all preferences.

This is great to freeze. Make up a big batch and then pup it into freezer safe containers and freeze until needed. This goes well with almost any of my bread recipes in the bread section.

I top my soup with a little YIAH Smoked Orange, Garlic and Chilli Salt which is what you can see in this photo.

Bacon and Lentil Soup

Ingredients

Scale
  • 1 onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 8 slices of short cut bacon with fat left on, diced
  • 20g butter
  • 1 carrot, diced small
  • 2 small potatoes, peeled and diced small
  • 1 litre good quality vegetable stock
  • 150g dried red lentils, rinsed really well
  • Salt and pepper

Instructions

  1. Place onion and garlic into bowl.
  2. Blitz on speed 7 for 5 seconds.
  3. Add bacon and butter.
  4. Cook at 100 degrees, speed 2 for 5 minutes.
  5. Add remaining ingredients.
  6. Cook for 100 degrees, speed 2 for 20 minutes. Check to ensure all vegetables are cooked through.
  7. Blitz your soup on speed 8, building up speed gradually. Please refer to your machines user manual or company for current guidelines on safely blitzing hot liquids. Each machine differs.

Notes

  • If you find the soup is too runny for your liking add an extra potato, diced small, and cook for a further 8 minutes.

Bacon and Red Lentil Soup

  • 2 garlic cloves, crushed
  • 8 slices of short cut bacon with fat left on, diced
  • 20g butter
  • 1 carrot, diced small
  • 2 small potatoes, peeled and diced small
  • 1 litre good quality vegetable stock
  • 150g dried red lentils, rinsed really well
  • Salt and pepper

Instructions

  1. Place butter, bacon, onion and garlic into a large stock pot over medium heat.
  2. Cook until translucent and bacon is slightly browned.
  3. Add remaining ingredients.
  4. Cook over medium to high heat for 20-25 minutes, stirring occasionally. Check to ensure all vegetables are cooked through.
  5. Blitz soup using a stick blender, blender or processor until nice and smooth.

Notes

  • If you find the soup is too runny for your liking add an extra potato, diced small, and cook for a further 8 minutes.
  • Thin soup with a little extra stock if needed.
  • This soup does thicken up upon standing.

    Have made this twice, once in the T31 and once in T5. Great recipe; quick and easy. I add mushrooms to the saute stage. Bath froze the whole lot for week day lunches.
