These were something I recently created by fluke. Turned out everyone in the house loved them so I got a bit more creative with them. These are like a biscuit bar, just a little softer due to the banana.

These are perfect for a breakfast on the go bar or as a lunchbox snack. Just be mindful of nuts though if these are going to school.

These make great biscuits (will make about 48 small biccies) or into 12-18 bars depending on what size you make them. The older kiddies and partner prefer the biscuit version but the baby likes the bar that he can hold on (hang on, he is 16 months old now. I should probably stop staying baby?!)

I use Vanilla Queens Vanilla Powder in this recipe. This is much more cost effective than vanilla beans or vanilla bean paste.

Banana Muesli Breakfast Bars

Ingredients

Scale
  • 2 medium ripe bananas, peeled
  • 200g granola, see blog for many recipes
  • 200g self raising flour
  • Pinch of baking powder
  • 90g maple syrup or honey, more or less to taste
  • ½ teaspoon vanilla powder or 1 teaspoon of vanilla bean paste
  • 80g butter, melted or softened
  • Pinch of ground cinnamon

Instructions

  1. Preheat oven to 180 degrees.
  2. Mash banana with a fork.
  3. Place all ingredients into a large mixing bowl and mix until combined.
  4. Shape into 12-18 bars. Number of bars will depend on your size preference.
  5. They may be slightly sticky. This is ok. If they are too soft to shape a bar out off simply add a little bit more flour until workable.
  6. Place onto a lined baking tray.
  7. Bake on 180 degrees for 15-20 minutes or until slightly golden.
  8. Allow to cool for 5 minutes then transfer to a wire cooling rack.
  9. Store in an airtight container.

Ingredients

Scale

  • 90g maple syrup or honey, more or less to taste
  • ½ teaspoon vanilla powder or 1 teaspoon of vanilla bean paste
  • 80g butter, melted or softened
  • Pinch of ground cinnamon

  1. Blitz banana on speed 5 for 5 seconds.
  2. Add remaining ingredients.
  3. Blitz on speed 4 until a dough forms.
  4. Shape into 12-18 bars. Number of bars will depend on your size preference.
  5. They may be slightly sticky. This is ok. If they are too soft to shape a bar out off simply add a little bit more flour until workable.
  6. Place onto a lined baking tray.
  7. Bake on 180 degrees for 15-20 minutes or until slightly golden.
  8. Allow to cool for 5 minutes then transfer to a wire cooling rack.

    Absolutely loved these. They could not have come at a better time after just discovering Uncle Toby’s oats bars. As someone who struggled to eat breakfast I’m so excited to have something I can just grab and go. Plus they’re better than the shop ones.
    I made them with the apple cinnamon granola.

    These are great – they are like muffin bars. I made 16 and they are quite large.

    Thank you so much these are yummy no other word required just yummy. I will be making them all the time. I used my frozen bananas as i have heaps and still so yummy.
