This is a my version of homemade Caramel Condensed Milk that I use in baking now and for sweets and deserts. It is similar to Top n’ Fill but I think much more delicious. It’s luscious, creamy and thick.

This is quite a thick condensed milk.  It is great in little tarts shells with some sliced banana and whipped cream or baked in tart shells until firm and drizzled with a little melted chocolate.

Why not try it on my famous Lazy Caramel Slice in place of sweetened condensed milk.

Caramel Condensed Milk

  • Total Time: 10

Ingredients

Scale
  • 140g milk powder
  • 100g dark brown sugar
  • 1 tablespoon golden syrup
  • 50g butter
  • 90g water
  • 1 teaspoon on vanilla paste, extract or essence

Instructions

  1. Place everything into bowl.
  2. Cook at 90 degrees, speed 4 for 9 minutes.
  3. Allow to cool or use immediately.
  4. This will thicken upon standing.

    Can you keep this once made or do you have to use it immediately?

      You can keep it. It should last up to a week in the fridge. Check before using though of course.

    yuuuum!! this is so good!
    I didnt have any golden syrup so used maple syrup.
    Was really yummy! Its now in the oven as part of the lazy caramel slice. thanks Peta!

    Can you double or triple this recipe? If so, how long do I cook it for – sorry only just got my thermomix!

      It can be doubled and cook for 15 minutes 🙂

    This is so thick and set once it’s finished is that normal I have a tm5 not sure if that alters the cooking process but it’s so thick I can barely get it out, it’s deliscious though!

      The TM5 heats much quicker than a 31 so yes the result would be different. It is def meant to be thick however.

    Hi, does this work without golden syrup? i have none, I want to make this so I can use in ice cream instead of condenced milk. i want to make home made caramel ice cream. thanks

      You can. It will be a different consistency but delicious. This recipe originally had no golden syrup but then I changed it.
