The other day I posted my Garlic and Cheese Bread Balls which were a huge hit. I can never pick what you will all like or hate haha!
 
Today I thought I would make a bigger batch with some different flavours. 
 
These are great for BBQs or as an addition to a pizza or pasta dinner. They make about 35 pieces and just pull away from one another. 
 
You can vary the flavours to suit your tastes so its very versatile. These have a lot less fat then a lot of other pull aparts which is great too.
 
Please note: the bread dough has been adapted from the Herb and Garlic Pull Apart found on the recipe community. This is my own method however for soft and fluffy bread. See my bread tips here.

Cheese and Bacon Bread Balls

Ingredients

Scale

Dough

  • 450g lukewarm water
  • 750g bakers flour
  • 3 teaspoons yeast
  • 1 teaspoon of salt
  • 3 teaspoons of bread improver, optional

Filling

  • 3 garlic cloves
  • 50g grated cheese, parmasen or tasty works well
  • 6 shortcut bacon slices, chopped
  • 1 tablespoons dried herbs (or fresh)
  • 4050g olive oil or melted butter

Instructions

Dough

  1. Add the ingredients in this order: water, yeast, flour, improver, herbs and salt.
  2. Blitz on speed 7 for 10 seconds to roughly combine.
  3. Lock lid and use the kneading function for 6 mins.
  4. Remove dough and place into a lightly oiled bowl. Cover with cling film and place into a warm spot. I use the front seat of my car or a warmed oven.
  5. Leave this to rise for approximately an hour or until doubled.
  6. Preheat oven to 180 degrees.
  7. Place garlic into tmx bowl.
  8. Blitz on speed 9 until fine.
  9. Scrape down.
  10. Add cheese, bacon, herbs and oil.
  11. Mix on speed 4 until just combined.
  12. Pour into a bowl.
  13. With your dough, roll it into small balls. Vary the size slightly – cherry tomato and golf ball size work well. I got 35 balls today.
  14. Roll each ball into the olive oil mixture and place into an oven proof dish. Today I used a ring form as it looks effective. No need to grease the dish at all. Place balls close together.
  15. Sprinkle any remaining cheese and bacon mix over the balls.
  16. Bake for 45-55 minutes until cooked through and golden on top. Time will vary on the size of your balls.
  17. If they are doughy cook a little longer.
  18. The balls will just pull away from one another.

Notes

  • Bread improver is optional however will help ensure your loaf is nice and soft.
  • Cook Time: 55

    Have made this a few times now and it’s always a winner! When I made it yesterday, I doubled the bacon, cheese & garlic for a more indulgent treat and it was the best yet! So light and fluffy (no bread improver) with so much flavour. Thanks!!

    I made this to go with some soup last night at it was delish!! It was a trial run for a family BBQ in a few weeks time. Thanks for your generosity in sharing you recipes. Kids smashed this bread and the balls were crunchy on the outside and soft and fluffy on the inside!

    OMG this is the BOMB! I wanted to add a bread gift to my christmas hampers and found this! Made a small one too so i could try and make sure it was yummy before gifting…BUT no need as usual another A-MAZING recipe from TRTLMT!!
