Who loves the chicken “Duets” you can buy in the freezer section of the supermarket? My best friend loves them and challenged me to see if I can create them. Challenge accepted.

My biggest concern was the sauce for the filling and how would I shape the chicken around it. Turned out it was so easy and tastes amazing. The sauce is so full of flavour. Its a yummy broccoli, cheesy, garlicky flavour hit. This recipe makes a little extra sauce then you need for the two serves in the recipe. I served left over with some chicken on pasta and inside pies the next day. Delicious. The sauce is amazing the next day. I will post these recipes shortly as well.

Cheese and Broccoli Filled Chicken

Just like the store bought chicken “Duets”.


Ingredients

Scale

Crumbs

  • 3 slices day old bread, broken up
  • Salt and Pepper

Chicken

  • 2 large chicken breasts, roughly chopped

Cheese and Broccoli Sauce

  • 1/2 brown onion, peeled and halved
  • 1 garlic clove, peeled
  • 35g butter
  • 35g plain flour
  • 240g milk
  • 110g broccoli florets
  • 80g grated cheese, tasty or cheddar
  • 20g grated parmesan cheese
  • Salt and pepper
  • A drizzle of olive oil.

Instructions

Cheese and Broccoli Sauce

  1. Place broccoli into bowl.
  2. Blitz on speed 7 for 5 seconds.
  3. Set aside.
  4. Place onion and garlic into bowl.
  5. Blitz on speed 7 for 5 seconds.
  6. Scrape down. Add butter.
  7. Cook at 100 degrees, speed 2 for 5 minutes.
  8. Add milk and flour.
  9. Cook at 90 degrees, speed 4 for for 5.5 minutes.
  10. Add broccoli, seasoning and cheeses.
  11. Cook at 90 degrees, speed 2 for for 2 minutes.
  12. Place into the fridge or freezer to cool and thicken.
  13. Clean bowl.

Crumbs

  1. Place bread and seasoning into the bowl.
  2. Blitz on speed 6 for 5 seconds.
  3. Set aside in a bowl or on a plate.

Chicken

  1. Place chicken breasts into bowl.
  2. Blitz on speed 7 for 6 to 8 seconds or until minced.
  3. Have all your ingredients ready. Ensure you sauce is nice and thick before commencing.
  4. Preheat oven to 180 degrees and line a baking tray with baking paper.
  5. Place a quarter of the chicken mixture on your hand. Shape it into a shallow bowl/cup shape.
  6. Place a tablespoon or more of sauce into the well of chicken mixture.
  7. Place another quarter of the chicken mince on top.
  8. Using your hands shape in to a nice ball. Try to ensure no sauce is leaking or exposed otherwise they will leak during baking.
  9. Roll into bread crumbs gently.
  10. Place onto baking tray and flatten slightly.
  11. Repeat for second ball.
  12. Drizzle with a little olive oil.
  13. Bake for approximately 25 minutes.
  14. Serve with veggies and a little extra sauce on the side (it is that good!)

Notes

  • You can make more by increasing the number of chicken breasts and breadcrumbs.
  • There will be enough sauce for approximately 4-6 balls.

    I made this for dinner last night and it was so easy to do and tasted divine!! I love Chicken Duets but the quality of the chicken has been pretty poor the last few years so I never buy them. Thank you for creating and sharing this recipe 😀

    I made these and they were yummy, but I had way to much sauce. Not that I’m complaining, I just used the leftovers to fill and drizzle over some prosciutto wrapped chicken.

    My only tip would be to make the sauce early to give it time to set.

    Raided the fridge & freezer to see what I could make for Dinner tonight – found this recipe. I made everything ahead of time and put the prepared Duets in the fridge till time to cook. Whilst cooking made mash and steamed veg in the Thermomix. They came out perfectly and were a hit with hungry hubby…

    Hubby made these over the weekend … we only got 3 out of the mix as they were made a little bigger than usual.
    LOADS of extra sauce which was really tasty poured over steamed veg the next night (and with some pasta and veg for lunches).
    So tasty!!!! Love the sauce – and love that it is versatile so you can use the leftovers for other things!

    Made these last night for dinner because my family love the ‘Alfredo’ variety of the store bought kind. Mstr 5 and Miss 7 thought these were so much better because they weren’t as salty. Next time I’ll make double and freeze for a quick easy dinner.
