I love Cheese Balls for entertaining. They are something just a little bit different and so versatile. 
 
The flavours can be changed to suit whatever you like. Some good combinations:
  • Chives and garlic
  • Garlic, rosemary, thyme
  • Garlic, basil, parsley, oregano
  • Spring onions
  • Chilli
  • Dried apricots
  • Garlic and pepper 
  • Gherkins
  • Capers
  • Pepper and lemon zest 
  • Premade herb blends
 
Last night I created this one in a matter of minutes. 
 
Place 250g firm cream cheese into tmx bowl. Add the flavourings of choice. I used a Your Inspiration At Home premade spice blend for my filling but use anything you like in yours. Blitz on speed 4 until only just combined. Don’t overwork it or you could end up with it too smooth.
Remove the cream cheese in your hands into a ball shape. Place into the fridge to firm up slightly.
 
Meanwhile wash the bowl out and crush a coating of your choice. Last night I used a mix of almonds, pepitas and a tablespoon of my YIAH seasoning. Other coating options:
  • Crushed nuts and seeds
  • Mix of nuts, parsley and pepper
  • Premade spice blend
  • Crushed savoury biscuits 
  • Chopped parsley and garlic 
  • Toasted breadcrumbs and lemon zest
  • Chia seeds 
 
Roll cheese ball in the coating and pop into the fridge. Remove from fridge approximately 10 minutes before serving just to soften it ever so slightly. Serve with crackers.
