I thought I would share my Chicken and Parmesan Pinwheels recipe with you today! They are so delicious. I cant get enough of them.

These are a great sandwich substitute for the lunchbox. Vary the veggies in these to suit what you have in your fridge. This recipe is very forgiving.

Chicken and Parmesan Pinwheel

Ingredients

Scale
  • 2 sheets of puff pastry
  • 1 onion, peeled and quartered
  • 2 garlic, peeled
  • 100g carrot
  • 10g spinach
  • 100g parmasen cheese
  • 500g chicken mince
  • slat and pepper, to taste
  • 1 egg, lightly beaten

Instructions

Then mix like this

  1. Preheat oven to 180C. Line two baking trays with baking paper.
  2. Place pastry onto bench to thaw.
  3. Add onion, garlic, carrot and spinach to bowl. Speed 7 / 3 seconds. Scrape down sides of the bowl.
  4. Add cheese, chicken and salt and pepper to taste. Speed 7 / 5 seconds.
  5. Spread chicken mixture over the two sheets of puff pastry.
  6. Roll pastry up into a log shape.
  7. Using thin string or a knife, cut each log into 8 rounds.
  8. Place rounds onto the baking tray.
  9. Brush each round lightly with egg.
  10. Bake for 20-25 minutes or until pastry id puffed up and cooked.
  11. Allow to cool slightly before serving or allow to cool completely before serving in the lunchbox.

Or cook like this

  4. Add cheese, chicken and salt and pepper to taste. Process on High for 5 seconds.
  5. Spread chicken mixture over the two sheets of puff pastry.
  6. Roll pastry up into a log shape.
  7. Using thin string or a knife, cut each log into 8 rounds.
  8. Place rounds onto the baking tray.
  9. Brush each round lightly with egg.
  10. Bake for 20-25 minutes or until pastry id puffed up and cooked.
  11. Allow to cool slightly before serving or allow to cool completely before serving in the lunchbox.
