Yum! My partner is in charge of cooking these. This is his meal.

They aren’t a full thermo mixer meal but different components are made in it very easily. Store bought is fine too though if you have it in the pantry.

We use my Tomato Bacon Sauce so we only occasionally add a slice of bacon or ham on top.

Chicken Parmigiana with Tomato Bacon Sauce

Ingredients

Breadcrumbs

  • 3 slices day old bread
  • A handful of parsley
  • 20g parmesan cheese
  • Salt and pepper
  • Place everything into bowl and blitz for 10 secs.
  • Any leftover unused breadcrumbs (that haven’t touched chicken) can be frozen.

Tomato Bacon Sauce

  • 10g oil
  • 8 slices of shortcut bacon, cut into chunks
  • 1 onion, peeled and quartered
  • 2 cloves of garlic, peeled
  • 1 zucchini, diced
  • 3 carrots, diced into small pieces
  • 60g spinach leaves
  • 600g tinned diced tomatoes
  • 80g tomato paste
  • 12 tablespoons vegetable stock concentrate, to taste
  • 1 tmx measuring cup of water
  • 1/4 bunch of parsley, roughly broken up with fingers
  • Place onion, bacon and garlic into bowl.
  • Blitz on speed 8 until fine.
  • Scrape down.
  • Add oil.
  • Cook for 5 mins on steaming temperature, speed 2.
  • Add zucchini, carrot, tomatoes, water, stock and paste.
  • Cook for 15 mins on steaming temperature, speed 2.
  • Add parsley and spinach. If you find it’s very thick, thin it with one tmx measuring cup of water. It’s dependent on your tastes.
  • Cook for 3 mins on steaming temperature, speed 2.
  • Once done slowly blitz up to speed 9. Blitz for 25 seconds until smooth.
  • Serve over pasta or as a pizza base sauce.

Chicken

  • 4 chicken breasts, butterflied
  • 2 eggs beaten in a bowl
  • 1 cup plain flour with 1 teas of salt and pepper added, in a bowl
  • 1 cup grated cheese
  • Oil
  • Dust one chicken breast with the seasoned flour. Shake any excess off.
  • Dip chicken into egg mixture. Shake any excess off.
  • Place into the breadcrumbs and cover well. Set aside on a plate.
  • Repeat for all breasts.
  • In a frying pan add oil and cook the breasts one at a time. Place onto a lined baking tray once cooked.
  • Top each breast with tomato bacon sauce and cheese. You can add a slice of bacon or ham between the two if desired.
  • Place under a hot grill until cheese has melted.
  • Serve with salad.

Notes

  • Those with a Thermomix will know their steaming temperature as Varoma temperature. Other machines will know it as the steaming or ST temperature.
  • This will make more sauce then needed. I freeze any leftovers as use as a pasta or pizza sauce as needed.
