These are delicious! Even the non chickpea fans of the house are impressed. My 10 month old who hates food can’t get enough of them nor can I. These will be a regular in the freezer.

These are easy and achievable for a busy work night meal. The mix takes no time at all. Just shape and fry.

I serve as is with some salad or inside my Herb and Garlic Wraps or Spinach Wraps with salad and a little cheese or sweet chilli sauce.

These can be frozen once cooked and reheated too so make for a very quick meal. The kiddies didn’t mind these cold the next day in their lunchboxes either.

Chickpea Patties

Description

An easy vegetarian option served as is or alongside salad or in wraps.


Ingredients

Scale
  • 2 pieces of day old bread, wholemeal or seeded works well
  • 1 teaspoon parsley, or to taste
  • 20g parmesan cheese
  • 1 garlic clove, peeled
  • Half an onion, peeled and halved
  • 400g can of chickpeas, drained and rinsed
  • 1 egg
  • 10g olive oil

Instructions

  1. Place bread, parmesan and parsley into bowl.
  2. Blitz on speed 7 for 8 seconds.
  3. Set aside.
  4. Add onion and garlic to bowl.
  5. Blitz on speed 7 for 5 seconds or until fine. Scrape down.
  6. Add oil.
  7. Cook at 100 degrees for 4 minutes, speed 2.
  8. Add remaining ingredients including breadcrumb mix.
  9. Blitz on speed 8 until well combined.
  10. Shape into patties and shallow fry in a frying pan. This will make 15 small patties in total.
  11. Drain well on paper towel and serve.

  • 1 garlic clove, crushed
  • Half an onion, diced
  • 10g olive oil
  • 400g can of chickpeas, drained and rinsed
  • 1 egg

Instructions

  1. Add oil to frying pan.
  2. Fry the garlic and onion over medium heat until translucent and fragrant.
  3. Place bread, parmesan and parsley into food processor.
  4. Blitz until breadcrumbs form.
  5. Add remaining ingredients including the onion and garlic mix.
  6. Blitz on high speed until combined.
  7. Shape into patties and shallow fry in a frying pan. This will make 15 small patties in total.
  8. Drain well on paper towel and serve.

    I thought I had chickpeas in the cupboard but didn’t, so I used Canneloni beans instead. They are delicious. Very, very good.

    I made these yesterday for my 9 month old twins for lunch (then dinner, then lunch) and they loved them. Even my fussy seven year old tried them and asked for two!! I added in 180g tuna which upped the protein for the kids. Will put these in rotation!
