Cinnamon Oat Pancakes

Perfect breakfast (or in my case brunch!).

Serve with chopped banana, strawberry and a dollop of yoghurt or cream. Yummo!

Cinnamon Oat Pancakes

Great for breakfast, afternoon tea or the lunchbox!

  1. 150g plain flour
  2. 110g rolled oats
  3. 1 teas baking powder
  4. 45g brown sugar
  5. 1/2 tablespoon ground cinnamon
  6. 1 egg
  7. 260mls milk
  1. Place flour, oats and baking powder into bowl.
  2. Blitz on speed 9 for 30 seconds.
  3. Add remaining ingredients and blitz for 10 seconds on speed 4. Stop at the 5 second mark to scrape down the sides.
  4. Pour small spoonfuls of the batter into a frying pan on medium heat - I do three at a time. I use a tiny bit of butter to grease my pan.
  5. This made 12 kid size pancakes.
  1. Store in an airtight container for two days or freeze.

    Made these for breakfast this morning & the kids loved them. I added extra milk to mine because my boys like to roll their pancakes and they were too thick initially. Loved the cinnamon flavour & I also added some vanilla paste.

    I added an extra 100ml of milk as I found the batter was a little to thick for what I’m used to, I loved the base flavour of the cinnamon but wasn’t sure how the kids would like it so I also added two grated apples – apple pie pancakes. YUM!
