Oh goodness me. I wish the photos showed how delicious these little Cookies and Cream bites are!

These are not only very quick to whip up, they use a handful of ingredients and are sure to impress anyone with a sweet tooth. These are a very sweet little morsel so trust me when I say to cut the slice into 50 little bitesize pieces.

Perhaps whip up a batch for your next afternoon tea with friends or for the next bake sale.

Cookies and Cream Slice Bites

Ingredients

Scale

Base

  • 400g chocolate biscuits
  • 1 tin of sweetened condensed milk

Topping

  • 200g good quality white chocolate
  • 1 tsp butter or coconut oil
  • 100g cream filled chocolate biscuits

Instructions

Then mix like this

  1. Line a 20x20cm square cake tin with baking paper.
  2. Place biscuits into bowl. Speed 8 / 8 seconds. Scrape down sides.
  3. Add condensed milk. Speed 8 until combined.
  4. Place base mixture into tin and press down to form an even layer. Place into fridge whilst preparing the topping.
  5. Wash and dry the mixer bowl.
  6. Add white chocolate and butter/oil to bowl. Melt 60C / 4 minutes / Speed 2 or until melted.
  7. Meanwhile, chop the biscuits roughly and sprinkle over the base.
  8. Pour melted chocolate over the slice.
  9. Allow to set in the fridge for a few hours.
  10. Remove slice from fridge and bring to room temperature before slicing into very small bite size cubes.

Or cook like this

  1. Line a 20x20cm square cake tin with baking paper.
  2. Place biscuits into a food processor. Mix on high for 5 seconds.
  3. Add condensed milk. Mix on a medium speed until combined.
  4. Place base mixture into tin and press down to form an even layer. Place into fridge whilst preparing the topping.
  5. Add white chocolate and butter/oil to a microwave bowl. Cook on medium heat for 45-60 seconds to melt completely.
  6. Pour melted chocolate over the slice.
  7. Allow to set in the fridge for a few hours.
  8. Remove slice from fridge and bring to room temperature before slicing into very small bite size cubes.
