Those that are familiar with my blog know I use packet ingredients in some of my recipes. I still love and buy take away food. I still buy pre-prepared foods. As much as I love creating things from scratch where I can, not everything we eat is and that’s okay. We sometimes get caught up in thinking we have to make everything from scratch in our magic $2000+ machine but that isn’t the case at all. You use it how you see fit for your family and household. Whatever works I say!

I am a mum of three young and energetic (but oh so gorgeous!) boys so life is pretty busy here working on the the blog and being co-owner of The 4 Blades Magazine. Some weeks in my house are just crazy. I love that I can buy delicious, affordable, kid friendly food for those nights when I just want a quick, nutritious and delicious meal for the family that isn’t take away or some odd concoction I have created with the last three items in the pantry that no one ends up eating.

I was recently asked to try and also create some exciting new recipes using the Created with Jamie range by Woolworths. This is right up my alley! I am not going to lie; I LOVE Jamie Oliver and everything he is about and stands for. Working on this project certainly has been a highlight for me!

Over the course of this week I will be posting 5 delicious meals using products from the Created with Jamie range. Please leave a comment below and let me know what you think of my creations!

For this recipe I have used the Created with Jamie Crunchy Garlic Chicken Fillets from the freezer section of your local Woolworths. Long time readers know how much I loooooove chicken. I could eat only chicken for the rest of my life and I’d be a happy camper.

These are so full of flavour and absolutely delicious. I had to fight my kiddies for these – they loved these chicken fillets as much as I did. These are so affordable at $8.99 (often on special though for $6.99) for two large free range chicken fillets. Keep a box or two in the freezer for an easy dinner.

Some of the many ways you could cook with these include:

  • In burgers with cheese, lettuce and beetroot. You can even slice them in half to form 4 burgers!
  • Sliced in a salad with mixed lettuce leaves, crispy bacon, sliced boiled eggs, croutons and a little garlic aioli.
  • Sliced and served in tortillas with a little salad, cheese and salsa.
  • Bake until almost cooked. Top with a little tomato paste and cheese. Return to the oven to cook the chicken completely and melt the cheese. Serve with steamed veggies or salad.

In today’s recipe I have served these delicious, crunchy chicken breasts with pesto potatoes. What I love about this dish is its perfect in either winter with warmed potatoes or in summer as a cold potato salad. Chicken and potatoes? You really can’t go wrong!

Created with Jamie | Crunchy Garlic Chicken Fillets with Pesto Potatoes

Ingredients

Scale
  • Created with Jamie Crunchy Garlic Chicken Fillets
  • 4 large potatoes, peel if desired
  • 600g warm water

Pesto

  • 60g cashews
  • 1 bunch of basil
  • A few sprigs of parsley
  • 2 garlic cloves, peeled
  • 20g Parmesan cheese
  • 60g olive oil
  • Pinch of salt

Instructions

  1. Cook chicken fillets according to package directions.
  2. Chop the potatoes into 6 large chunks.
  3. Gently boil them in a pot of water on the stove over medium heat.
  4. Cook until tender. Approximately 18 minutes or so.
  5. Place all of the pesto ingredients except oil into a food processor. Process on high for a few seconds. Scrape down. Add oil. Process on medium for 10 seconds.
  6. Once the potatoes are cooked, gently stir half of the pesto through the warm potatoes.
  7. Serve cooked chicken fillet with pesto potatoes.

Notes

  • This will make more pesto than what you will need for this recipe. Simply pour into a clean jar, cover with a thin layer of olive oil and refrigerate for up to a week. You can also freeze this if preferred.

Ingredients

Scale
  • Created with Jamie Crunchy Garlic Chicken Fillets
  • 4 large potatoes, peel if desired
  • 600g warm water

Pesto

  • 60g cashews
  • 1 bunch of basil
  • A few sprigs of parsley
  • 2 garlic cloves, peeled
  • 20g Parmesan cheese
  • 60g olive oil
  • Pinch of salt

Instructions

  1. Cook chicken fillets according to package directions.
  2. Place all of the pesto ingredients except oil into the tmx bowl. Speed 8 / 5 seconds. Scrape down and repeat.
  3. Add oil. Speed 8/10 seconds. Remove from bowl and set aside.
  4. Fill the bowl with 600g warm water. There is no need to clean the bowl before this step.
  5. Chop the potatoes into 6 large chunks.
  6. Place into the bottom steaming attachment dish.
  7. Put into place and steam the potatoes 20 minutes / steaming temperature / speed 2.
  8. Once steamed gently stir half of the pesto through the warm potatoes.
  9. Serve cooked chicken fillet with pesto potatoes.

    I think this would be a winner in our house! I try to avoid pre-packaged food where I can, but you’re so right, some crazy weeks call for it and I’d much prefer the boys to be eating Jamie Oliver inspired chicken fillets than any other type of fast food. Thanks Peta x
