This week I have been posting new recipes that feature a product from the fantastic Created with Jamie range by Woolworths. What a fun week it has been. Don’t worry! I have one more recipe to post tomorrow.

For today’s recipe I have used the free range Pork Belly with Honey Spiced Glaze from the meat section of your local Woolworths. Priced at $21.99 per kilo.

I can’t say the thought of pork belly thrilled me prior to cooking this Honey Spiced Glazed version. I had only ever had it once, many moons ago, and it was awful. It was a rubbery, jelly, squishy lump of meat on my plate – far from appetising that is for sure. I could never understand why people raved about pork belly and why it was popular. Well that was until I cooked the Created by Jamie version. Now you might be wondering “Why on earth did she buy it?”. Good question. As mentioned in last nights post I don’t eat much meat besides chicken much to my partners disgust. The poor guy is a little over chicken I think. So I bought this pork belly for him knowing it was right up his alley.

I wasn’t wrong. He thought all his Christmases had come at once. He LOVED this. So much so when we went to dinner that night with family and friends he was telling them all about it. And much to my shock all three kiddies devoured it, including Mr 1 year who is on the “I hate food train” at the moment. I tasted the top glazed layer and the flavours were amazing. It was a sticky, crispy topping jam packed full of flavour. The flavours just worked.

This will 100% feature in our weekly meal plans when we want something a bit special for dinner. I couldn’t help going back the next day and buying two more packs in the fridge. I love that I can cook this for the rest of the family and I can have some of the delicious Crunchy Garlic Chicken Fillets in the freezer for me for those night I want an easy “set and forget” type meal. 

Today I have served this amazing pork belly with honey carrots. Something that is so classic and simple yet asked about all the time in our questions group. Below is my recipe.

Ingredients

Scale
  • Pork Belly with Honey Spiced Glaze

Honey carrots

  • 2 bunches of dutch carrots, tops chopped off
  • 2 Tbsp honey
  • 1 Tbsp butter
  • 500g hot water

Instructions

  1. Cook pork belly according to packet instructions.
  2. Place hot water into bowl.
  3. Rinse carrots (2 bunches).
  4. Place into bottom and top steaming tray.
  5. 12 minutes / steaming temperature / speed 3.
  6. Check they are cooked to your liking. Do not overcook as they can be soggy.
  7. Place into a dish. Drizzle honey over carrots.
  8. Place smalls dabs of butter over carrots and toss to melt the honey and butter. Your carrots should be nice and glossy.
  9. Serve with pork belly.

Notes

  • You can steam other vegetables whilst steaming the carrots.

    9.30 at night and I have an overwhelming need to go shopping and eat! Most people crave sweets, but I love savoury….. I can not wait to try this!!

    Looks amazing! My kids have just discovered honey carrots- definately a good match with pork belly I think!
