Yep. My Freezing adventures continue! Earlier this week there was Freezer Muffin Mix and Frozen Biscuit Dough Balls but tonight is pizza! No more frozen boxed pizzas here! I couldn’t even tell you the last time I bought one of those. Years and years ago.

Here is a quick way to have a hot pizza on the table in no time at all AND without all the nasties and excess oil (Don’t get me wrong I do love a good takeaway pizza from the right place). It will require a little prep work though. I’m not that much of a miracle worker.

You know how on some occasions you feel like doing a big cook up to stock the freezer with meals? Yeah I know. Happens rarely but when it does happen this is one of those items to prepare for the freezer. It makes dinner time in the future so easy.

I often make pizza for dinner for the kiddies but only need one so I pop the other two into the freezer for another night. Simply pop the frozen pizza on a baking tray and bake for 20-30 minutes. So quick and easy!

Note: I use the Decor brand pastry sheet containers. Its a large flat square and perfect.

Frozen Pizzas

Description

This recipe will make 2 thick crust pizzas, 3 medium pizzas or 4 thin crust pizzas.


Ingredients

Scale

Pizza bases

  • 450g lukewarm water
  • 750g bakers flour
  • 3 teaspoons yeast
  • 1.5 teaspoon salt
  • 2 tablespoons olive oil

Base sauce

  • See blog for homemade tomato paste or passata which both work well

Toppings

  • Use any toppings that you like
  • 200g grated cheese, I grate mine in the tmx

Instructions

Bases

  1. Add the ingredients in this order: yeast, water, oil, flour, salt.
  2. Blitz on speed 7 for 10 seconds to roughly combine.
  3. Knead for 6 mins.
  4. Remove dough and place into a lightly oiled bowl. Cover with cling film and place into a warm spot. I use the front seat of my car or a warmed oven.
  5. Leave this to rise for approximately an hour or until doubled.

Assembly

  1. Preheat oven to 180 degrees.
  2. Line two large square freezer safe containers with baking paper.
  3. Remove dough from bowl and divide it into desired portions.
  4. Knock out the air by shaping your dough into desired number of pizza bases. I shape these within the container to ensure I have the right size.
  5. Place paper and base onto a baking tray and bake for 6 minutes. You are just wanting to par-bake it. This will ensure it doesn’t have a soggy base after cooking. If you are using a very hot pizza stone to cook your pizzas you can skip this step.
  6. Allow to cool completely.
  7. Place into the container.
  8. Top with sauce.
  9. Cover with toppings and grated cheese.
  10. Place lid on securely and pop into the freezer.
  11. Freeze for 3-6 months.

To cook

  1. Preheat oven to 180 degrees.
  2. Remove frozen pizza from the container and place onto baking trays. You can use a very hot pizza stone if you prefer a crispy crunchy base.
  3. Bake for approximately 20-30 minutes or until cooked to your liking.
  4. Serve.

Notes

  • If you don’t have a tmx, you can make pizza dough by kneading the ingredients by hand. Knead until a nice smooth dough has formed.

Frozen Garlic Bread


Ingredients

Scale

Dough

  • 220g lukewarm water
  • 375g bakers flour
  • 1.5 teaspoons yeast
  • 1 teaspoon of salt
  • 1.5 teaspoons of bread improver, optional

Garlic butter

  • 100g butter, softened
  • 6 garlic cloves
  • 1 teaspoon chopped parsley
  • 1 teaspoon mixed herbs
  • Pinch of salt and pepper

Instructions

  1. Add the ingredients in this order: yeast, water, flour, improver, salt.
  2. Blitz on speed 7 for 10 seconds to roughly combine.
  3. Knead for 6 mins.
  4. Remove dough and place into a lightly oiled bowl. Cover with cling film and place into a warm spot. I use the front seat of my car or a warmed oven.
  5. Leave this to rise for approximately an hour or until doubled.
  6. Remove dough from bowl, knock out the air by shaping your dough into 2-3 long rolls.
  7. Place them onto a lined tray.
  8. Allow to rise until almost doubled in size.

Assembly

  1. Preheat oven to 180 degrees.
  2. Bake for approximately 30-40 minutes until cooked through.
  3. Remove bread from the oven and cut slits horizontally into the loaves.
  4. Allow to cool.
  5. Add butter and herbs to bowl.
  6. Blitz on speed 5 until combined or for easier clean up combine butter and herbs in a small bowl and mix to combine well. Ensure you dice or crush your garlic first.
  7. Place a little butter mix in each slit once cooled.

To freeze

  1. Wrap tightly in aluminum foil and a layer of cling film.
  2. Pop into the freezer.
  3. Freeze for 3-6 months.

To cook

  1. Preheat oven to 180 degrees.
  2. Pop the garlic bread/s onto a baking tray and bake for approximately 30-40 minutes.
  3. In the last 10 minutes open up the foil slightly to crisp up the outside of the bread.
  4. Serve.

    Thank you!!! This makes pizza night much easier. I’ve only tried the garlic bread so far but it is fantastic. There is only two of us at home so I made 6 smaller rolls and cut it like ones you get from the pizza shop. It makes 4 pull away pieces! Perfect for two people!

    Hi peta. I’m planning on doing a few of these fort toddler, small size maybe half to quarter sized pizzas. How long should I par cook for for smaller ones or is there a certain colour/texture I need to watch for?

      Good question. Id say 10 minutes or so in a preheated oven. Dont worry of you cook for longer. Wont matter at all ๐Ÿ™‚
