I was recently looking through a cookbook and saw a picture of a slice that looked similar to this. It had a biscuit base, peanuts and a top n fill middle and a layer of chocolate on the top. As soon as I saw it I thought “I can make that from scratch and change up the flavours”. I’m sure this is nothing like the original recipe in terms of texture or taste but my goodness its delicious!

You can change this up to suit your tastes. Try different nuts or add some dried fruit to it as well. Top with chocolate of choice or leave it without. The chocolate isn’t essential at all. It tastes lovely on its own cut into bite size pieces. Play around and see what you like.  Would love to hear your variations!

Fuss Free Caramel Macadamia Slice

Description

A quick and easy slice that is sure to impress!


Ingredients

Scale

Base

  • 100g self raising flour
  • 60g desiccated coconut
  • 30g brown sugar
  • 80g butter

Caramel

  • 110g milk powder
  • 90g brown sugar
  • 90g butter
  • 70g water
  • 1 teaspoon vanilla bean paste

Other

  • 100g macadamia nuts, whole or roughly chopped
  • Melted chocolate for topping, optional

Instructions

  1. Preheat oven to 180 degrees.
  2. Line a 20cm x 20cm pan with baking paper.
  3. Place all caramel ingredients into bowl.
  4. Cook at 90 degrees, speed 4 for 9 minutes.
  5. Pour into a bowl and set aside.
  6. Do not wash the bowl out.
  7. Place base ingredients into tmx bowl.
  8. Blitz on speed 4 for 45 seconds. A dough will form.
  9. Place dough into baking tin. Press down and compact well.
  10. Top with macadamias.
  11. Top with caramel sauce.
  12. Bake for 25-30 minutes, turning the tray every 5 or so minutes to ensure even cooking. A little wobble in the middle is fine but you are looking for a firmer texture.
  13. Refer to picture in the main post to see what the slice should look like once done.
  14. Allow to cool slightly and then pop into the fridge to cool completely and set.
  15. Slice into pieces and drizzle with melted chocolate. Allow for the chocolate to set.
  16. Serve.

Notes

  • This tastes just as good without the chocolate topping.

    Hi Peta
    I absolutely love this slice and recently took it to a Party, and got asked for the recipe by a few of the guests.
    One friend told me that her husband told her, that if she made the slice for him he would “Love her forever” now that’s what I call a powerful slice.

    DEVINE!!! Made this slice for the first time yesterday and it turned out great. Took it to a class today and everyone loved it. Will become a regular recipe
