If you are looking for a new easy and delicious loaf recipe I have one for you! Don’t get me wrong, my 10 Second Coconut Bread and 30 Second Banana Bread are delicious and favourites in this house but this is certainly up there with deliciousness – Is that even a word? Oh and it’s egg free!

This is a deliciously moist loaf and isn’t overly sweet despite the golden syrup. This is great to freeze and thaw. If you like, add some berries on top before baking or add a mashed banana or some apple puree through. Even half a cup of cauliflower or pumpkin puree would be a good addition – Don’t tell my kiddies I said that though.

 This is based on a recipe I found in an old cookbook however the quantities have changed quite a bit to achieve a nice moist loaf.

Golden Syrup Loaf


  • Author: The road to loving my Thermo Mix
  • Total Time: 1 hour 5 minutes

Ingredients

Scale
  • 400g self rising flour
  • 500g milk or soy/nut milk
  • 90g melted butter or coconut oil
  • 80g golden syrup
  • 50g sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 180 degrees.
  2. Line a large loaf tin with baking paper.
  3. Add all the ingredients to a large bowl or stand mixer.
  4. Mix until combined. This is a thick batter.
  5. Pour into prepared tin.
  6. Bake for 40-60 minutes or until cooked through. Every oven does vary so you may need to cook a little longer than stated.
  7. Allow to cool on a rack.
  8. Serve.

Golden Syrup Loaf – TMX method

Ingredients

  • 80g golden syrup
  • 50g sugar
  • 1 tsp vanilla extract

  4. Blitz on speed 6 until combined. This is a thick batter.
  5. Pour into prepared tin.
  6. Bake for 40-60 minutes or until cooked through. Every oven does vary so you may need to cook a little longer than stated.
  7. Allow to cool on a rack.
  8. Serve.

    Delicious Peta!!! Moist and yummy. I sprinkled top with brown sugar, cinnamon and ground ginger which looked good and tasted great!

    This just came out if the oven. It smells great! I got a little scared seeing 400g of SR flour and was not sure if my loaf pan was ‘large’ lol so I halved the recipe… Then once made I was worried there wasn’t enough batter lol. But it seems to have made a perfect half loaf for me to take to morning tea tomorrow.
