This is another favorite in our house with the kiddies. This is a great easy weeknight meal as it really requires very little effort and the kiddies devour it. Its a great dish to be able to sneak it some extra vegetables as well.
We have it on its own as a main meal however it would make a great side dish for larger families.

Hidden Veggie Carbonara

Ingredients

- 2 garlic cloves, peeled
- 2 zucchinis, roughly chopped
- 100g cauliflower, roughly chopped
- 6 slices short cut bacon, diced
- 160g uncooked dried tagliatelle
- 450g warm water
- 200g thickened cream
- 1 egg, lightly beaten
- 1 mc grated cheese (Tasty or Parmesan)
Instructions
- Place garlic and vegetables into bowl. Chop on Speed 8 for approx 10 secs until very fine.
- Add bacon to bowl. Cook on 100 degrees, 2 min, reverse, soft spoon.
- Add pasta, cream and water.
- Cook at 100 degrees, 14 min, reverse, soft spoon. I use the spatula and give it a bit of a stir every 4-5 mins just to ensure the pasta is broken up.
- With 1 min to go add beaten egg and cheese. Add salt and pepper to taste.
- Serve. Sauce may appear runny but thickens quite quickly. It’s best eaten immediately.
Notes
- Other veg can be added or substituted. Spinach and leek are great veggies to use.
- Diced chicken could be added also. I would do it with the bacon and cook for 10 mins at 100 degrees, reverse, soft speed.
