Honey Mustard chicken is a big hit in this house. I thought I would do a bit of a twist.

These were quite tasty served along with salad but you could shape them much bigger and use as a burger patty or serve in tortillas or spinach wraps.

These can be frozen and popped into the lunchbox or reheated for a quick lunch or dinner. Use this mixture for meatballs or sausage rolls.

Honey Mustard Chicken Bites

Description

A twist on honey mustard chicken.


Ingredients

Scale
  • 500g chicken breast, chopped into chunks
  • 1 garlic clove, peeled
  • 1 onion, peeled
  • 1 carrot,roughly chopped
  • 1 small zucchini, roughly chopped
  • 1.5 tablespoon honey
  • 1.5 tablespoon wholegrain mustard
  • 4 sprigs of parsley
  • Salt and pepper, to taste

Instructions

  1. Place veggies and parsley into bowl.
  2. Blitz on speed 9 for 6 seconds. Scrape down.
  3. Add remaining ingredients.
  4. Blitz on speed 7 until well combined.
  5. Shape into 14 small patties.
  6. Cook either in an oven at 180 degrees for 20 minutes or in a frying pan over medium heat until cooked through.

Notes

  • Due to the honey, it may splatter slightly in a pan so keep that in mind. Turn the heat down slightly if that does happen.

  2. Process on medium speed until fine. Scrape down.
  3. Add remaining ingredients.
  4. Process on medium speed until well combined.
  5. Shape into 14 small patties.
  6. Cook either in an oven at 180 degrees for 20 minutes or in a frying pan over medium heat until cooked through.

Notes

  • Due to the honey, it may splatter slightly in a pan so keep that in mind. Turn the heat down slightly if that does happen.
  • If you don’t have a food processor, use chicken mince and grate your veggies before mixing.

    I made these tonight along with your tortillas and my husband called them amaze-balls, not honey mustard chicken balls!! I put lettuce tomato and capsicum in the tortillas and tomato sauce in the kids ones. I made about 18 balls and baked them in the oven as I didn’t want to watch them in the frypan or worry about possible honey splatter!! Another winner in our house so thank you for amazing recipes to keep dinner time interesting.

    I made this last night next time I will use the thigh as I found them a bit dry and the breast is known to be dry but I had mine with sweet chilli sauce they were delicious. this one is a winner for me

    Has anyone tried these with Tuna instead of chicken? My kids don’t like chicken, but will inhale tuna (strange I know), but I find when I try to swap the ingredients, the tuna makes it too runny and nothing stays together when its being cooked.
