This Lamb and Zucchini Mince with Cous Cous is a dish our cook at work used to make all the time and I loved it (I don’t eat much red meat but when I was pregnant I couldn’t get enough of it!). I don’t recall how to make it exactly so this is my take on it.

You can certainly add more vegetables to this dish if desired. You can serve this on cous cous, pasta, rice or even zoodles.

The sauce is quite runny after cooking but I like this because it adds flavour to the cous cous. It will thicken upon standing. Speaking of sauce, be sure to use good quality stock and worstershire sauce for this dish.

This is a chunkier mince style dish.

Lamb and Zucchini Mince with Cous Cous – TMX

Ingredients

Scale
  • 400g lamb mince
  • 1 onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 1 carrot, roughly chopped
  • 1 celery stalk. roughly chopped
  • 10g oil
  • 2 medium zucchinis, diced
  • 50g worstershire sauce
  • 100g liquid beef or vegetable stock
  • Salt and pepper to taste
  • Cous Cous

Instructions

  1. Cook four serves of cous cous according to packet directions.
  2. Add onion, garlic and carrot to bowl.
  3. Blitz on speed 7 for 5 seconds. Scrape down.
  4. Add oil. Cook on 100 degrees, speed 2 for 4 minutes.
  5. Insert whisk attachment. Break up mince into small chunks and add to bowl.
  6. Cook on 100 degrees, softest speed for 4 minutes.
  7. Add remaining ingredients.
  8. Cook on 100 degrees, softest speed for 10 minutes.
  9. Serve alongside cous cous.

Lamb and Zucchini Mince with Cous Cous

Ingredients

Scale
  • 400g lamb mince
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 1 carrot, diced very finely
  • 1 celery stalk, diced very finely
  • 10g oil
  • 2 medium zucchinis, diced
  • 50g worstershire sauce
  • 100g liquid beef or vegetable stock
  • Salt and pepper to taste
  • Cous Cous

Instructions

  1. Cook four serves of cous cous according to packet directions.
  2. Add oil, onion, garlic, carrot and celery to a frying pan over medium heat.
  3. Cook until aromatic and translucent.
  4. Break up mince into small chunks and add to pan.
  5. Cook until browned, storing to break up chunks.
  6. Add remaining ingredients.
  7. Cook for 10 minutes over medium heat or simmer for 30 minutes if you have time.
  8. Serve alongside cous cous.

    Very quick and easy. The whole family loved it. We had it with Beef mince and I added Broccoli and Cauliflower too. Will have again.

    Beautiful recipe, I did it all in thermie with rice-
    Chop garlic, onion, carrot, zucini 4 seconds speed 5, add oil saute 6minutes, varoma reverse speed 2, add mince cook varoma 6minutes reverse speed 2, add 80grams rice, Worcestershire sauce and , stock cook varoma 15minutes reverse speed 2
