Words can not describe how tasty this slice is. I’m embarrassed to admit I have made it 3 times already in less than two weeks. Its what I call a lazy caramel slice. Its has all the taste of a caramel slice but so much easier and quicker. I’m not a bossy person but you must try this slice! Try some warm out of the oven or cold from the fridge. Either way it will knock your socks off! (Can you tell I love it?!). It is meant to be a soft almost melt in your mouth base and slightly gooey topping. It wont be a super firm and crunchy base and will not be firm like traditional caramel slice.

My mum made something very similar back when we were kids but the base was quite different. This is one of my favourite go to slice bases. Easy but tasty. So I have used it.

“Heavenly” and “Divine” are two words some of my partners work friends used to describe this slice. I’m told some people didn’t stop at one (or even two) pieces. That’s a hit in my books!

Lazy Caramel Slice

Description

Carmel Slice in 25 minutes? Yes please!!!


Ingredients

Scale
  • 60g desiccated coconut
  • 90g self raising flour
  • 60g brown sugar
  • 80g butter, cubed
  • 80g or 1/2 cup of dark choc chips
  • 200g sweetened condensed milk

Instructions

  1. Preheat oven to 180 degrees.
  2. Line a square 20cm x 20cm tin with baking paper.
  3. Place butter, sugar, coconut and flour into bowl.
  4. Blitz on speed 7 for 45-60 seconds until a dough like consistency is achieved.
  5. Press into the tin. Use the bottom of a glass or tmx measuring cup to smooth out and compress the base. Make sure you have compressed it really well.
  6. Sprinkle choc chips over the top.
  7. Drizzle of the condensed milk. Rustic is fine. It doesn’t have to cover the whole base.
  8. Bake for 20 minutes or until a slight golden layer has formed. See picture.

Notes

  • If you want to make a large slice you can double the base and choc chip ingredients, use only 300g of condensed milk and use it in a lamington or slice tray. Cook for an extra 8-10 minutes if doubling.

    Oooh, so good – I make this with dried fruit and sometimes slivered almonds in- between the choc chips – I like to think the fruit makes it ‘healthy’???

    The caramel slice was a disaster for me . The biscuit base took over the entire slice because it rose so high and then started to burn around the edges. I’m wondering if the recipe should state plain flour instead of s.r?

      No, it definitely is SR flour. Ive made it far too many times so know it back to front. Was it compacted and smoothed out well?

    Delicious!!! Tasted it almost straight out of the oven and it was just perfect. Gooey and sticky and so sweet but not too sweet 🙂

    Made it for my hubby who has had a tough day at work – can’t wait for him to get home and try it! Good thing I made a double batch – there will be some left!!

    Loved the recipe Peta, I used a rectangle slice tin, so base was thinner & used the whole tin of condensed milk (minus a couple spoons) 😉 turned out great, I overcooked it a touch as I got distracted, just a bit more brown. Everyone loved it. Thanks for the AWESOME recipes 😀

    I want to make this for my gluten free daughter, if I just replace the self raising flour for gluten free self raising flour, is that all I need to do?

    This is so good. Since developing a dairy allergy one of the things I missed the most was caramel slice. I changed your recipe a bit and used coconut condensed milk and dairy free dark chocolate. OMG IT TASTES AMAZEBALLS!!!

      You can make your own condensed milk in the Thermie with water, milk powder, sugar and a pinch of salt. Recipe on rc, only takes 3 mins. For this slice I bring the sugar right down to 40g (plenty of sugar in the base). ☺

    there are two problems with this recipe 1) it doesnt make enough 2) it only uses half a can of condensed milk which is just dangerous as it cannot go to waste… ! my only question is, is it supposed to be pretty well set in the oven or still a bit runny when it comes out? i left it in for a bit longer as it was still runny after 20 so ended up with some burnt-ish edges and still a bit runny in the middle but this did set on cooling. regardless its super yummy and easy and hubby loved it – said it was like an awesome chocolate biscuit?! 🙂

    The name suits it… Definitely a lazy slice, it’s so easy to make! I have made this for my family, & my husband’s family & everyone LOVES IT!!!!!!!!!!! I’ll have to be careful not to make it too much, because it doesn’t last long at all.

      Haha! Glad you like it. I dont freeze it but I have been told by others that they do and defrosts fine (I have been told its yummy frozen too – uh oh! haha)

    I didn’t have any choc chips, so I used macadamias instead and also made my own condensed milk and used brown sugar in it to make it even more caramelly. YUM!

    Yummo! Made this this arvo and it is very nice! However my base was a bit soggy. I think next time I would bake the base for 10 mins before adding choc chips etc.

    One of my favourite sweets to make. I usually make it once a fortnight for the husband’s work snacks! I am GF so I always make sure I make it with real flour otherwise I eat it all within a very unacceptable time frame 🙂

    Hi Peta, I had to let you know how much my family, friends and I LOVE this slice. Its now my go to slice!! Not only is it delicious, but its so simple and quick.
    I had friends over for a birthday BBQ on the weekend. When the guests found out there was no Lazy Caramel Slice for dessert (we had birthday cake organised instead) they pleaded with me to make it anyway. I was happy to oblige, as it took me no time to whip it up while chatting with them at the same time. I should have made a double batch as it disappeared in no time 🙂

    I whipped these up last night with some home made caramel condensed milk and bought them to work. They were gone by the time I went to get one for my morning coffee!
    I used gluten free flour and they worked well, other than my tin was too big (even with a double batch) so they were a bit thin, but still so good

    Soooo yummy!! But I do have a question. I have made these twice now, and the first time I accidentally used plain flour, but it turned out quite well. Perhaps not quite as thick as your picture, but still a decent base. The second time, I used SR flour, and the base was very thin, and much more moist/oily, difficult to work with in the tin too. Still crazy yummy, so no issues on flavour, just texture and look..? Any ideas what might have gone wrong?

    So yummy!!! I do have a questions. First time I made these, I accidental used plain flour, but they turned out ok, with a good base. Second time I used SR. flour and the base was very thin, difficult to spread into the tin as it was so moist/oily. No issues with taste, just texture and look. I’m pretty sure I followed recipe as per instructions. Any ideas what might have happened?

      Its not a glamorous looking slice. Plain flour will give a prettier result but a firmer/more biscuit like base 🙂

    Delicious! However I doubled the recipe so I think maybe next time I would cook on a lower temp over a longer time as the base seems to be a little undercooked but it was burning on top so I had to take it out. Also, my base seems a lot darker than the picture, not sure why. I think I might try plain flour next time as my hubby prefers the firmer base 🙂

    I’m not that crazy about caramel but with a few tweaks even I’m on board with this slice! I use 70% chocolate and make my own condensed milk with a lot less sugar. It’s tasty and gooey-chewy without falling to pieces in your hands. My husband and a few of the kids are practically made of caramel and they enjoy this slice a lot.
