Love lasagne but want something just a little quicker and something the kids with LOVE? This is a recipe I have been making for well over 10 years. Anything with white sauce is always a hit in my books.

There is lots some yummy veggies hidden in this so great for children and which child doesn’t love slurping up spaghetti when mum or dad aren’t looking.

Adapt this recipe to suit you. Use any type of mince you like and vary the pasta used. I often use macaroni or elbows as the kiddies love those shapes. You can of course use lasagne sheets too and layer like a traditional lasagne.

This tastes even better the next day as there is always leftovers. Serve as is or with salad and garlic bread for a complete meal.

Mince and Veggie Spaghetti Bake

A quick and easy alternative to lasagne. Always a hit with the kiddies. Serve as is or with salad and garlic bread for a complete meal.


Ingredients

Scale
  • 200g thick spaghetti pasta or pasta of choice
  • 100g grated cheese, to top

Meat sauce

  • 2 garlic cloves, peeled
  • 1 onion, peeled and quartered
  • 2 carrots, chopped
  • 1 celery stick, chopped
  • 1 large zucchini, chopped
  • Olive oil
  • 4 rashers of bacon, diced
  • 400g good quality beef mince
  • 170g tomato paste
  • 1 beef stock cube or 1 teaspoon of beef stock paste
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper

White sauce

  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • Salt and pepper
  • 500g milk
  • 50g butter
  • 50g flour
  • 50g grated cheese

Instructions

  1. Cook pasta according to directions on packet. Drain and place in the bottom of a large casserole dish.
  2. Place onion and garlic into bowl.
  3. Blitz on speed 7 for 5 seconds.
  4. Scrape down.
  5. Add a drizzle of oil and cook at 100 degrees, speed 2 for 5 minutes.
  6. Add celery, carrot and zucchini.
  7. Blitz on speed 7 for 5 seconds. Scrape down. Repeat. We like it quite fine.
  8. Add bacon and large clumps of mince.
  9. Cook on soft speed, reverse, 100 degrees for 5 minutes.
  10. Add tomato paste, stock, sauce and season well with salt and pepper.
  11. Cook on soft speed, reverse, 100 degrees for 12 minutes. Don’t worry if there are any clumps that look a little point. these will cook through in the oven.
  12. Pour over the top of the pasta.
  13. Clean the bowl.
  14. Add all white sauce ingredients except cheese.
  15. Cook at 90 degrees, speed 4 for 12 minutes.
  16. Add cheese.
  17. Cook at 90 degrees, speed 4 for 2 minutes.
  18. Pour over mince layer.
  19. Top with grated cheese and bake until golden. Approximately 20-30 minutes.
  20. Serve as is or with salad and garlic bread for a complete meal.

  • 1 onion, diced
  • 2 carrots, grated or diced
  • 1 large zucchini, grated or diced
  • 1 celery stick, diced
  • Olive oil
  • 4 rashers of bacon, diced
  • 400g good quality beef mince
  • 170g tomato paste
  • 1 beef stock cube or 1 teaspoon of beef stock paste
  • 50mls water
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper

White sauce

  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • Salt and pepper
  • 500g milk
  • 50g butter
  • 50g flour
  • 50g grated cheese

Instructions

  1. Cook pasta according to directions on packet. Drain and place in the bottom of a large casserole dish.
  2. Place onion, garlic and vegetables into a frying pan.
  3. Add a drizzle of oil and cook over a medium heat until onion is slightly translucent.
  4. Add bacon and mince.
  5. Cook on until brown.
  6. Add tomato paste, water, stock, sauce and season well with salt and pepper. Add more water if it isn’t saucy enough.
  7. Cook under reduced slightly and thickened.
  8. Pour over the top of the pasta.
  9. Add butter to saucepan.
  10. Melt over medium heat.
  11. Once melted add flour, mustard powder and garlic powder and whisk over heat until combined well. Continue to whisk for a minute to cook the flour off but be sure not to burn it.
  12. Slowly drizzle in the milk and whisk at the same time. Continue to whisk until thickened and desired consistency.
  13. Add cheese. Mix to combine.
  14. Pour over mince layer.
  15. Top with grated cheese and bake until golden. Approximately 20-30 minutes.
  16. Serve as is or with salad and garlic bread for a complete meal.

    Made this for dinner last night and it was great! hubby loved it. i added a chilli and mushrooms as they needed to be used but looking forward to the left overs today.
