This week I have been posting some delicious new recipes that I think would make fantastic party food. Recipes like my Lemon Slice Bites and my delicious Bacon and Onion Dip

I thought to myself, it is not a party unless there is hot food involved! I have been wanting to make these Mini Chicken Cordon Bleus since I posted my Mini Chicken Kiev Bites. So I recently got creating! I tested and tested again and finally have a great new party recipe for you to try!

They are a delicious crunchy chicken-nugget like morsel full of ham and cheesy goodness. They make for a great family dinner too. Serve with some homemade veggies and steamed veggies or salad. We love to serve our with a little relish or chutney to dip in.

Mini Chicken Cordon Blues

Ingredients

Breadcrumbs

  • 3 slices day old bread, I like to use Turkish bread for a really nice crunch
  • salt and pepper, to taste

Chicken

  • 600g chicken breast or thigh, roughly chopped
  • 1 spring onion, roughly chopped
  • 2 Tbsp fresh parsley
  • ½ tsp chicken stock powder
  • salt and pepper, a pinch of each

Filling

  • 16 small cubes of mozzarella or Colby cheese
  • 50g shaved smoked ham, cut into quarters

Instructions

Then mix like this

  1. Place breadcrumb ingredients into bowl and blitz for 10-15 secs/speed 7.
  2. Any leftover unused breadcrumbs (that haven’t touched chicken) can be frozen.
  3. Place all chicken ingredients into bowl. Speed 8 / 5-10 seconds until smooth and minced.
  4. Wrap some ham around a cube of cheese.
  5. Shape a small amount of chicken mince around each cheese and ham bundle. Ensure the ball is completely covered in chicken mince and roll between your palms to ensure it is a nice ball shape.
  6. Roll ball into breadcrumbs.
  7. Cooking in the air fryer: Drizzle each ball with a little olive oil. Cook for 12-14 minutes at 200 degrees.
  8. Cooking in the oven: Bake for 30 minutes at 180 degrees.
  9. Shallow fry: Cook over medium to hot heat in 1cm of oil, turning often, for 4 minutes each side or until cooked.

Or cook like this

  • Place breadcrumb ingredients into a food processor. Process on high until a breadcrumb forms.
  • Any leftover unused breadcrumbs (that haven’t touched chicken) can be frozen.
  • Place all chicken ingredients into a food processor. Using the pulse function, blitz the chicken in small bursts until minced and combined.
  • Wrap some ham around a cube of cheese.
  • Shape a small amount of chicken mince around each cheese and ham bundle. Ensure the ball is completely covered in chicken mince and roll between your palms to ensure it is a nice ball shape.
  • Roll ball into breadcrumbs.
  • Cooking in the air fryer: Drizzle each ball with a little olive oil. Cook for 12-14 minutes at 200 degrees.
  • Cooking in the oven: Bake for 30 minutes at 180 degrees.
