We love Chicken Kievs here. These Mini Chicken Kiev Bites are a twist on these. These are a delicious bite size chicken kiev perfect for parties or events when finger food in on the menu.

I cook these Mini Chicken Kiev Bites in the Airfryer and they are so moist inside but delicious and crunchy on the outside. This is my favourite way to cook them. Instructions are given for shallow frying and oven also.

Mini Chicken Kiev Bites

  • Author: The road to loving my Thermo Mixer
  • Yield: 16 1x

Ingredients

Scale

Butter

  • 120g unsalted butter, cubed
  • 2 garlic cloves, peeled
  • 8 sprigs of parsley
  • Salt to taste

Breadcrumbs

  • 3 slices day old bread, I like to use Turkish bread for a really nice crunch
  • Salt and pepper, to taste
  • 1/2 tsp dried garlic powder, optional

Chicken

  • 600g chicken breast of thigh, roughly chopped
  • Salt and pepper, a pinch of each

Instructions

Butter

  1. Add garlic and parsley to bowl. Blitz on speed 9 for 10 secs.
  2. Scrape down sides.
  3. Add cubed butter and salt. Blitz on speed 10 for 25 secs.
  4. Place on baking paper and roll into 16 small balls about the size of a marble.
  5. Place into fridge.
  6. Any remaining butter can be frozen.

Breadcrumbs

  1. No need to clean the bowl from the butter.
  2. Place everything into bowl and blitz for 10-15 secs/speed 7.
  3. Any leftover unused breadcrumbs (that haven’t touched chicken) can be frozen.

Assembly

  1. No need to clean bowl after crumbs.
  2. Place chicken and seasonings into bowl.
  3. Blitz on speed 7 for 10 seconds.
  4. Shape a small amount of chicken around each ball of butter. Ensure the ball is completely covered in chicken mince.
  5. Roll into breadcrumbs.
  6. Cooking in the airfryer: Drizzle each ball with a little olive oil. Cook for 12 minutes at 200 degrees.
  7. Cooking in the oven: Bake for 30 minutes at 180 degrees.
  8. Shallow fry: Cook over medium to hot heat in 1cm of oil, turning often, for 4 minutes each side or until cooked.

I used Herbamare as the seasoning. I thought I’d let my toddler try one, expecting to eat most of it myself as he is quite fussy. He’s had 3! So between my husband and son, I’ve been lucky to get any!
Very easy and really very tasty. I cooked mine in the oven.

Delicious! I used almonds instead of bread and they turned out fantastic. Our 2 yr old came back for seconds. Thanks for another great recipe.

These were yummy. I rolled them in egg first though to make the crumbs stick better. 🙂

Mine are turning out very dry 🙁 Could I not be using enough butter?? Cooking them for too long?? Oven too hot??
    Any suggestions??

I would suggest they were over cooked slightly and maybe turning your oven down. Breast is naturally drier. You can swap for thigh if you prefer.

at first I was hesitant to try this recipe. First the garlic butter, then the breadcrumbs, then the chicken, it just seemed like SO MUCH WORK…..but…..it really wasn’t, and they were so nice! Everyone devoured them. I cooked them in the oven.
