I feel like a genius with this idea! Now I’m sure if I was to google I would find that I’m the last person on earth to discover this.
Last night I had a teething baby who was not going to put down for more than 5 minutes. I needed to make a quick dinner for my older children. I’ve been addicted to pies lately and had my pie maker on the bench from lunch. Quiche mixture + pie maker = a super quick and easy dinner! In the time it took to cut up the salad and cheese the quiches were done. This makes 6.
Vary the flavours to suit whatever is in your fridge.
Some filling ideas:
- Ham, bacon, zucchini
- Sundried tomato and feta
- Caramelised onion
- Spinach and ricotta
- Corn and bacon
- Roasted capsicum and feta

Pie Maker Quiches
- Total Time: 13

Ingredients

- 3 eggs
- 1/2 onion, peeled and halved
- 1 garlic clove
- 5 slices of shortcut bacon, diced (or chopped in tmx along with onion etc)
- 10 baby spinach leaves, sliced (or chopped in tmx along with onion etc)
- 50g milk
- 35g plain flour
- 30g grated cheese
- pepper
- oil
Instructions
Then mix like this
- Add onion and garlic to bowl. Speed 8 for a few seconds. Scrape down.
- Add bacon and a drizzle of oil.Sauté at 5 minutes / 100C / Speed 2.
- Add remaining ingredients.
- Mix on speed 4 until combined, approximately 15 seconds.
- Pour into pie maker.
- It took about 5-6 minutes to cook each one. I left them in for 8 minutes to brown up a little. Each pie maker differs so be sure to read your instruction manual.
- Serve with salad.
Then cook like this
- Dice onion and crush garlic. Add to a frying pan.
- Add bacon and a drizzle of oil. Cook until onion has softened.
- Add remaining ingredients to a mixing bowl and whisk to combine. Add bacon mix to the bowl.
- Pour into pie maker.
- It took about 5-6 minutes to cook each one. I left them in for 8 minutes to brown up a little. Each pie maker differs so be sure to read your instruction manual.
- Serve with salad.

This is my favourite ‘can’t be bothered tonight’ recipe. We had them tonight and my fussy two year old even ate it! So yummy!

What have I done wrong? My quiches weren’t cooked in the middle! My pie maker is only a cheapie so maybe it was too hot?
I just use a cheap kmart one for mine. I’d just cook a little longer as long as the outside wasn’t burnt?
These are such an easy “I just don’t have time” lunch or dinner. Really the only time we ever pull out our pie maker. Thanks Peta!
