My boys loved these. Something a bit different to muesli bars. You could add dried fruit to this as well if desired. 
 
They lasted a week in the an airtight container.

Popcorn Bars

Description

My boys love these. Something a bit different to muesli bars. You could add dried fruit to this as well if desired.


Ingredients

Scale
  • 10g glucose syrup
  • 180g honey
  • 25g coconut oil
  • 35g pepitas
  • 35g sunflower seeds
  • 5g chia seeds
  • 8 cups puffed corn (approximately 140g)

Instructions

  1. Preheat oven to 180 degrees. Line a lamington to with baking paper.
  2. Melt honey, glucose syrup and coconut oil at 90 degrees for 7 mins.
  3. Add remaining ingredients.
  4. Mix on reverse, speed 3 until just combined.
  5. Place into tin. Ensure it isn’t too thick of a layer or it becomes too hard for kiddies to eat. A layer two corn puffs high is good.
  6. Bake for 10 minutes or until just golden.
  7. Stand and then cut into pieces. Some will crumble off when cutting. I put these into a jar as a trail type mix.

    Wow! These sound great! Can I substitute anything for the glucose syrup? We don’t have any, and it’s something I would normally have. I might get some if you really recommend it! I’m not a Thermomix owner (yet!) but I should be able to simply mix week, right? And I am thinking of adding some sultanas too 🙂

      I find the glucose really helps to make them “stick”. You can try without.
      I don’t use Glucose Syrup a lot but its good for these and in my Chewy Butterscotch Bars so always have some n the cupboard 🙂
