Potato and Bacon Soup

Ingredients
  1. 380g potatoes, skin on and diced small
  2. 6 slices short cut bacon, roughly chopped
  3. 2 garlic cloves, peeled
  4. 1 onion, peeled and quartered
  5. 10g butter
  6. 300ml milk
  7. 200ml water
  8. 1/2 tabs veggie stock concentrate
  9. Small handful parsley
Instructions
  1. Place onion, garlic and bacon into bowl. Turbo three times.
  2. Add butter and cook at 100 degrees on speed 2 for 5 minutes.
  3. Add all ingredients except parsley.
  4. Cook at varoma on speed 2 for 20 minutes.
  5. Add parsley.
  6. Blitz on speed 4 working slowly up to speed 10 until smooth.
  7. I served it with cheesy bread in this photo.
Notes
  1. You can use less milk and more water if you prefer.
