Potato and Bacon Soup

Ingredients

Scale
  • 380g potatoes, skin on and diced small
  • 6 slices short cut bacon, roughly chopped
  • 2 garlic cloves, peeled
  • 1 onion, peeled and quartered
  • 10g butter
  • 300ml milk
  • 200ml water
  • 1/2 tabs veggie stock concentrate
  • Small handful parsley

Instructions

  1. Place onion, garlic and bacon into bowl. Turbo three times.
  2. Add butter and cook at 100 degrees on speed 2 for 5 minutes.
  3. Add all ingredients except parsley.
  4. Cook at varoma on speed 2 for 20 minutes.
  5. Add parsley.
  6. Blitz on speed 4 working slowly up to speed 10 until smooth.
  7. I served it with cheesy bread in this photo.

Notes

  • You can use less milk and more water if you prefer.
  • Prep Time: 5
  • Cook Time: 25

    This is absolutely delicious. The flavours are just lovely and I did exactly what the recipe said. This is a definite keeper. Have made it twice in the past week. Made some sourdough to go with it today. Yum and thanks for a great recipe!!!
