This has been a big hit! Very easy to make and tastes so fresh and fruity compared to store bought jams. Other fruit such as raspberries, mixed berries or fresh apricots can be used.

Strawberry and Vanilla Bean Jam

Ingredients

Scale
  • 500g fresh strawberries, hulled and cut in half
  • 380g jam setting sugar
  • Squeeze of vanilla bean paste, to taste

Instructions

  1. Put all of the ingredients in the bowl.
  2. Cook for 20 mins, speed 2, 100 degrees.
  3. Then 8 mins, speed 2, steaming temperature.

Notes

  • If you put more sugar in the thicker it becomes.
  • The longer you cook the thicker it becomes.
  • I blitzed the strawberries for a few secs before the additional 8 mins as there were still a few very slight chunks. If you like chunky jam put the strawberries in whole.

    I’ve been on a jam frenzy since I found your recipe 🙂 just in the last few days I’ve done blueberry/apple and Strawberry/apple and I’ve got a batch of strawberry/raspberry/pear cooking now.

    I add about a tbl of lemon as well. and OMG the jam setting sugar just takes all the guess work out of it doesn’t it. It’s wonderful. I ran out this last batch and had some jam setting and some raw so it’ll be interesting to see how this one works out.

    This jam is soooo good and it hasn’t failed me yet. The Vanilla bean just makes it that little bit special, my husband will eat this on the soft fluffy bread rolls I also make and if I let him he will eat the whole batch in one sitting!
