As a kid I loved roll ups! We rarely got them as they cost about the same as a Ferrari so when we did get them it felt like Christmas!
 
My kiddies haven’t got the faintest idea what a roll up is but I thought I’d make them some for the lunchbox. 
 
Now the boys thought I was feeding them poison and weren’t all that interested in these so I’ll keep persuing. I on the other hand liked these. They are no where near a real roll up in texture or flavour but a nice healthy snack regardless. 
 
The sugar is optional. I have done it with both. I like the sweetness the vanilla sugar adds as my strawberries were quite tart. If you have a sweeter berry or like tartness I would leave the sugar out. Rapadura can be used also. You can use honey but the cooking time will probably need to be extended slightly. 
 
This made two trays of roll ups. Cutting them up as roll ups you will get about approximately 8 or 16 depending how big you cut them (cutting the roll up tray into 2 x 4 rectangles works well). If you want the smaller roll ups shown you will get about 20+ little strips.
 
These will keep for about a week or two but they wont last that long! Store in an airtight container or in the fridge.

Strawberry Roll Ups

Ingredients

Scale
  • 900g of strawberries, stalk removed (about two punnets)
  • 1.5 tablespoon vanilla sugar, optional

Instructions

  1. Preheat oven to 75 degrees. My oven wouldn’t go any lower and this temp worked fine.
  2. Line two large baking trays with baking paper.
  3. Place strawberries and sugar into bowl.
  4. Blitz on speed 9 for 25 seconds.
  5. You can strain the seeds off if you like but I have kept them in.
  6. Pour mixture over the trays, half on each tray.
  7. A cake knife/icing knife comes in handy so you can smooth the mixture out so that it is even. If its thicker and thinner in some areas it won’t be a huge problem but best to keep it even if possible.
  8. Place into the oven.
  9. If you have done the mixture thin, almost see through it will take about 1.5-2 hours to dehydrate. If its a bit thicker it will take about 2.5 hours. The ones shown took me 2 hours. To give yourself plenty of time allow for 3 hours. Don’t do this when you are rushing out the door.
  10. You want to keep dehydrating it until it is no longer soft in the middle. Slightly tacky is ok but try to have tackiness to a minimum.
  11. Remove from oven and sit for 10 minutes. Using kitchen scissors cut into roll ups or strips.
  12. I leave the paper on for easy storage and this kiddies can easily peel the roll up off.

    Thanks so much for this recipe, I gave it a go today after some prompting from my husband 🙂 It turned out great overall though I suspect the thinner bits ended up crisper and less fruit leather-like. Not to worry, I’m going to whiz up those crunchy bits to make strawberry powder.

    My 20mo son loved them so happy smiles in it house. So glad it is strawberry season!

      Yes, most fruits will work. Pineapple, apple and pear are all good 🙂
