Bacon and Vegetable Bites

Oh goodness these are delicious! I love the hidden veggies in these too. You can vary what vegetables you use. I use whatever is in the fridge. They taste just as good without bacon too for a vegetarian option. They can be frozen after baking and thawed. These are great warm or cold for kiddies lunchboxes. Edited: Opps! Please ignore the spelling error in photo. I blame baby brain and sleep deprivation! :)

Hidden Vegetable Pasta Carbonara

This is another favorite in our house with the kiddies. This is a great easy weeknight meal as it really requires very little effort and the kiddies devour it. Its a great dish to be able to sneak it some extra vegetables as well.  We have it on its own as a main meal however it would make a great side dish for larger families.
