Another Thermomix slice? Yes please! The other week I posted my Marshmallow Weetbix Slice and this idea had been playing on my mind a bit so the other day I had some time up my sleeve and I thought I’d experiment. I used components of my favourite and regular recipes to combine them into this Wagon Wheely Slice. Who doesn’t love wagon wheels!?

My partner took this in to work and it was a hit. it is a big sugar hit so a tiny slither is plenty. Trust me.

I used home made raspberry jam I this and have given you a recipe for it however you can use any jam you like including store bought. If you do make the jam in this recipe it will be much more than you need so pop the reminder into a steralised jar, vacuum seal it and put away for another time or to give as a Christmas gift.

There are a few steps to this recipe and you will need to wash your bowl between steps but its worth it!

Wagon Wheely Slice – TMX

Ingredients

Scale

Base

  • 140g plain flour
  • 70g brown sugar
  • 50g desiccated coconut
  • 120g butter, cubed

Jam

  • 250g frozen raspberries
  • 1 peeled and cored apple, approximately 100g
  • 150g sugar

Marshmallow

  • 220g white sugar
  • 75g cold water
  • 1.5 tablespoon powdered gelatine
  • 75g boiling water

Ganache

  • 150g dark chocolate
  • 80g cream

Instructions

Base

  1. Preheat oven to 180 degrees. Line a 20x20cm square cake tin with baking paper.
  2. Place all of base ingredients into bowl.
  3. Blitz on speed 5 for 30 seconds.
  4. Pour and press into tin.
  5. Bake for 15 minutes until slightly golden.

Jam

  1. Place everything into bowl.
  2. Cook at 100 degrees, speed 2 for 25 minutes with steaming basket on top.
  3. Insert measuring cup into lid and blitz on speed 8 for 20 seconds or until smooth.

Marshmallow

  1. Once the slice base has cooled slightly (see below section on assembly), add sugar and cold water to clean bowl.
  2. Insert whisk attachment.
  3. Blitz on speed 3 for 3 minutes.
  4. Meanwhile combine the gelatine and boiling water in a small bowl and whisk to dissolve completely.
  5. Once the 3 minutes is up, add the gelatine mix to the bowl.
  6. Blitz on speed 4 for 3 minutes.

Assembly

  1. Once base is cooked and cooled slightly, spread it with a little jam. You want a nice thin layer.
  2. Pour marshmallow over the top and allow to set in the fridge.

Ganache

  1. Place ingredients into bowl.
  2. Melt at 60 degrees, speed 2 for 5 minutes or until melted. It may be quicker. Scrape down sides halfway through.
  3. Allow ganache to cool slightly.
  4. Pour over slice and allow to cool for 30 minutes.
  5. Slice into 20 rectangles and serve.
  6. Store in the refrigerator but serve at room temperature for best results.

Wagon Wheely Slice – Non TMX

Ingredients

Scale

Base

  • 140g plain flour
  • 70g brown sugar
  • 50g desiccated coconut
  • 120g butter, cubed

Jam

  • 250g frozen raspberries
  • 1 peeled and cored apple, approximately 100g
  • 150g sugar

Marshmallow

  • 220g white sugar
  • 75g cold water
  • 1.5 tablespoon powdered gelatine
  • 75g boiling water

Ganache

  • 150g dark chocolate
  • 80g cream

Instructions

Base

  3. Blitz on speed 5 for 30 seconds.
  4. Pour and press into tin.
  5. Bake for 15 minutes until slightly golden.

Jam

  1. Place everything into a saucepan.
  2. Cook over medium heat for approximately 30-45 minutes until thickened.
  3. Process in a processor to ensure a smooth jam.

Marshmallow

  1. Once base has cooled slightly add sugar and cold water a large bowl.
  2. Using electric beaters, beat on high for 3 minutes.
  3. Combine the gelatine and boiling water in a small bowl and whisk to dissolve completely.
  4. Add the gelatine mix to the bowl.
  5. Using electric beaters again, beat on high for 3 minutes or until thickened.

Assembly

  1. Once base is cooked and cooled slightly, spread it with a little jam. You want a nice thin layer.
  2. Pour marshmallow over the top and allow to set in the fridge.

Ganache

  1. Place ingredients into a heatproof bowl, over a saucepan of gently simmering water.
  2. Melt and stir often to combine.
  3. Alternatively you can melt together in thr microwave, stirring ever 20 seconds.
  4. Allow ganache to cool slightly.
  5. Pour over slice and allow to cool for 30 minutes.
  6. Slice into 20 rectangles and serve.
  7. Store in the refrigerator but serve at room temperature for best results.

    Ohmehgawd!! This is amazing. I impressed myself making my own jam and marshmallow. The marshmallow was amazing and all the flavours together were sensational. Impressive!!

    This was easy & looks delicious (I haven’t tried it yet). I am so impatient though and didn’t wait for my ganache to cool before pouring it onto the marshmallow (oops) it looks a little like a marble cake. will exercise more patience next time.. I cannot believe how easy it was to make marshmallow!!!

    Another super tasty EASY recipe! If u told me at the start of the yr (pre TM) id be making marshmallow and jam from scratch id have laughed in their face! But Peta seriously u make thw difficult SO EASY! Thanks

    I’d just like to say I made wagon Wheelies on the 5th Nov had the last one today (cause we don’t have kids at home and I hid them from Hubby) and the biscuit was still crunchie yummo thanks Peta for sharing
