These Weetbix Biccies came about after creating my Marshmallow Weetbix Slice that I posted last night. I am always looking for more lunchbox treats and this is one of them. The kiddies adore these biscuits. 

It is such an easy recipe it is now a go to recipe each week. Get the children involved with this one. It is almost foolproof. I wont actually say it is foolproof as there is always one person!

You can add different flavours if you wish. A little cocoa powder works well or choc chips. I often add a little flaxseed meal and chia seeds if I want to sneak in some extra goodies. I do this with a  lot of my baking recipes. Cinnamon would be lovely too.

Weetbix Biccies


  • Author: The road to loving my Thermo Mixer

Ingredients

Scale
  • 4 weetbix
  • 75g brown sugar
  • 170g white self raising flour
  • 40g shredded coconut
  • 145g butter, cubed
  • 1 teaspoon of vanilla bean paste

Instructions

  1. Preheat oven to 180 degrees.
  2. Line two baking trays with baking paper.
  3. Place all of base ingredients into bowl.
  4. Blitz on speed 5 for 30 seconds.
  5. Roll into 28 small balls and place on to the tray. Ensure you leave space between as they will grow substantially in the oven.
  6. Press down lightly with a fork.
  7. Bake for 15-20 minutes until slightly golden.

  • 75g brown sugar
  • 170g white self raising flour
  • 40g shredded coconut
  • 145g softened butter, cubed
  • 1 teaspoon of vanilla bean paste

Instructions

  1. Preheat oven to 180 degrees.
  2. Line two baking trays with baking paper.
  3. Place all of base ingredients into bowl.
  4. Mix with a spoon until well combined and a dough forms. You can use a food processor if you wish.
  5. Roll into 28 small balls and place on to the tray. Ensure you leave space between as they will grow substantially in the oven.
  6. Press down lightly with a fork.
  7. Bake for 15-18 minutes until slightly golden.

  • Cook Time: 20

    Made these today (3 batches) – some plain and some with choc chips – soooo easy to make

    Thanks so much Peta, we cook these weekly now for our little guy. I do tend to throw some extra seeds in (sunflower, pepita, chia) as he gobbles them up so I figure its just another way to fill him with goodness.

    Thanks again Peta, one of the easiest biscuits to make, I just love the throw everything in the bowl and mix recipes, and these are very tasty and enjoyed by young and old! Will try with chia seeds and choc chips next time as others suggested!
