Today I am sharing my Zucchini Slice recipe with you. After 3 years blogging you would have thought I would have posted it before but no. 

This is a very, very simple version thats so incredibly easy to whip up that its  ago to lunchbox filler and weeknight dinner. 

I like to grate the carrot and zucchini rather than blitz in the Thermomix. I prefer the texture better however if you want to blitz in the mixer you absolutely can. Be sure to remove excess liquid though!

Zucchini Slice

Ingredients

Scale
  • 1 onion, peeled and quartered
  • 1 garlic clove, peeled
  • 100g carrot, grated and excess water squeezed out
  • 200g zucchini, grated and excess water squeezed out
  • 1 Tbsp parsley
  • 6 eggs
  • 100g parmesan cheese
  • 30g self raising flour or GF equivalent
  • 2 Tbsp oil or melted butter
  • 2 Tbsp milk of choice
  • salt and pepper, to taste

Instructions

Then cook like this

  1. Preheat oven to 180C. Line a rectangle slice tin with baking paper.
  2. Place onion and garlic into bowl. Speed 7 / 3 secs.
  3. Add remaining ingredients.
  4. Speed 3 until mixed. You may need to use your spatula to help.
  5. Pour mixture into tin.
  6. Bake for 30-40 minutes until set.
  7. Allow to cool slightly before slicing.

Or mix like this

  1. Preheat oven to 180C. Line a rectangle slice tin with baking paper.
  2. Finely dice onion and garlic. Place into a mixing bowl.
  3. Add remaining ingredients to bowl.
  4. Pour mixture into tin.
  5. Bake for 30-40 minutes until set.
  6. Allow to cool slightly before slicing.
