Apple Cinnamon Pikelets

These can be frozen.


Ingredients

Scale
  • 150g apple with skin on, cored and quartered
  • 1 tsp ground cinnamon
  • 300g self raising flour
  • 80g sugar, can be reduced
  • 200mls milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ½ teaspoon of finely ground salt
  • 50g butter, melted

Instructions

Then mix like this

  1. Place apples into bowl. Speed 7 / 5 seconds. Scrape down the sides. Repeat.
  2. Add the remaining ingredients into bowl except the butter. Speed 6 for 20-30 seconds or until lump free.
  3. Add melted butter and blitz on speed 6 until just combined.
  4. Place small spoonfuls of the batter into a frying pan on medium heat. I do three at a time. I use a tiny bit of butter to grease my pan.
  5. Once bubbles appear on the pikelet, flip over and cook for 30 seconds or until cooked through.
  6. Serve warm with a drizzle of honey.

Or cook like this

  1. Place apples into a food processor. Medium speed for 5 seconds. Scrape down the sides. Repeat. You may wish to grate your apples instead.
  2. Add the remaining ingredients into a large mixing bowl except the butter. Mix until just combined.
  3. Add melted butter and mix until incorporated.
  4. Place small spoonfuls of the batter into a frying pan on medium heat. I do three at a time. I use a tiny bit of butter to grease my pan.
  5. Once bubbles appear on the pikelet, flip over and cook for 30 seconds or until cooked through.
  6. Serve warm with a drizzle of honey.
