I wasn’t going to post this recipe as it is so basic but my kiddies (especially Mr 2) can not get enough. I thought “Lets post! Someone else may love them too!”.

My kiddies aren’t fans of Goji berries so I was pondering how I could use up the big bag of them I bought. I was creating a different recipe for a top secret project (all will be revealed soon!) and then got sidetracked and created these. These make a great snack for the lunchboxes or when out and about. I keep a jar full of them in the fridge for easy snacks.

I hope you like them as much as Mr 2!

Apple Goji Bites

Description

Will make 40-50 small bites depending on the size of your cutter.


Ingredients

Scale
  • 200g goji berries
  • 100g dried apple rings
  • 160g toasted muesli of choice, see blog for recipes

Instructions

  1. Place everything into bowl. Speed 10 until a dough forms. This can take up to 2 minutes.
  2. Pour dough out and roll into a ball.
  3. Roll between two pieces of baking paper until 0.5cm high.
  4. Using small bite size cutters, cut shapes from the dough and place into a container.
  5. These will keep for up to two weeks in an airtight jar. We keep ours in the fridge.

Notes

But I don’t have a TMX

  • Simply use a food processor. Process on high until a dough forms.
