Description
This makes 500g of dip, enough for a large party. Will keep for up to 24 hours in the fridge. You can make this in advance. In fact it’s even better the next day!

Gather these
- 8 shortcut rashers of bacon, trimmed of fat
- 1 small onion, peeled and diced
- 1 garlic clove, crushed
- drizzle of oil
- 500g cream cheese
- 100g sour cream or Greek yoghurt
- 1/2 bunch of chives
- salt and pepper, to taste
Instructions
Then mix like this
- Place oil bacon, onion and garlic into a large frying pan. Cook over a medium heat until the bacon is crispy and the onions are softened and browned. Allow to cool slightly.
- Add onion and bacon mix to mixer bowl with the remaining ingredients. Speed 8 / 5 seconds. Scrape down sides. Speed 4 / 8 seconds.
- Place into a serving bowl, sprinkle with extra chives and serve with crackers.
Or cook like this
- Place oil bacon, onion and garlic into a large frying pan. Cook over a medium heat until the bacon is crispy and the onions are softened and browned. Allow to cool slightly.
- Add onion and bacon mix to food processor with the remaining ingredients. Use the pulse function to process the mixture in small bursts until it all comes together. You may need to scrape down the sides a few times during this process.
- Place into a serving bowl, sprinkle with extra chives and serve with crackers.
Notes
- Be sure to use a strong flavoured bacon for this recipe.
