Bacon and Lentil Soup

Ingredients

Scale
  • 1 onion, peeled and quartered
  • 2 garlic cloves, peeled
  • 8 slices of short cut bacon with fat left on, diced
  • 20g butter
  • 1 carrot, diced small
  • 2 small potatoes, peeled and diced small
  • 1 litre good quality vegetable stock
  • 150g dried red lentils, rinsed really well
  • Salt and pepper

Instructions

  1. Place onion and garlic into bowl.
  2. Blitz on speed 7 for 5 seconds.
  3. Add bacon and butter.
  4. Cook at 100 degrees, speed 2 for 5 minutes.
  5. Add remaining ingredients.
  6. Cook for 100 degrees, speed 2 for 20 minutes. Check to ensure all vegetables are cooked through.
  7. Blitz your soup on speed 8, building up speed gradually. Please refer to your machines user manual or company for current guidelines on safely blitzing hot liquids. Each machine differs.

  • If you find the soup is too runny for your liking add an extra potato, diced small, and cook for a further 8 minutes.
  • Thin soup with a little extra stock if needed.
  • This soup does thicken up upon standing.
