Ingredients

- 1 onion, diced
- 2 garlic cloves, crushed
- 8 slices of short cut bacon with fat left on, diced
- 20g butter
- 1 carrot, diced small
- 2 small potatoes, peeled and diced small
- 1 litre good quality vegetable stock
- 150g dried red lentils, rinsed really well
- Salt and pepper
Instructions
- Place butter, bacon, onion and garlic into a large stock pot over medium heat.
- Cook until translucent and bacon is slightly browned.
- Add remaining ingredients.
- Cook over medium to high heat for 20-25 minutes, stirring occasionally. Check to ensure all vegetables are cooked through.
- Blitz soup using a stick blender, blender or processor until nice and smooth.
Notes
- If you find the soup is too runny for your liking add an extra potato, diced small, and cook for a further 8 minutes.
- Thin soup with a little extra stock if needed.
- This soup does thicken up upon standing.
