Bacon and Red Lentil Soup

Ingredients

Scale
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 8 slices of short cut bacon with fat left on, diced
  • 20g butter
  • 1 carrot, diced small
  • 2 small potatoes, peeled and diced small
  • 1 litre good quality vegetable stock
  • 150g dried red lentils, rinsed really well
  • Salt and pepper

Instructions

  1. Place butter, bacon, onion and garlic into a large stock pot over medium heat.
  2. Cook until translucent and bacon is slightly browned.
  3. Add remaining ingredients.
  4. Cook over medium to high heat for 20-25 minutes, stirring occasionally. Check to ensure all vegetables are cooked through.
  5. Blitz soup using a stick blender, blender or processor until nice and smooth.

Notes

  • If you find the soup is too runny for your liking add an extra potato, diced small, and cook for a further 8 minutes.
  • Thin soup with a little extra stock if needed.
  • This soup does thicken up upon standing.
