Jams and Spreads

Date Jam

I am always looking for spreads for the kiddies especially Mr 10 month old (can you believe he was only a few weeks old when I started TRTLMT?!). We often have enough savoury ones like honey peanut butter, avocado, hummus, spreadable cream cheese with chives and onion etc but never many sweet ones that aren't full of added sugar. I often use fruit purees as a spread on toast, crumpets or english muffins but thought Id try something new. I got this idea when I was blitzing dried fruit for my Apricot Bites and Mini Fruit Balls. I Googled and saw its been done heaps. This is my version. This [...]

Spreadable Cream Cheese with Chives and Onion

Why buy those expensive spreadable cream cheese tubs from the supermarket when you can easily make your own for half the price!   Great to serve on crackers, sandwiches, bagels etc. This is yummy stuffed into chicken breasts as well or an addition in to spinach and cheese rolls.    I looooove chives so use a whole bunch. Use less if you prefer.   This will last a week in the fridge.

Sugar Free Wild Berry and Chia Jam

There is no refined sugar in this jam so I was a bit skeptical about this but it is actually quite nice and has set to a nice consistency. I gave some to the 3 year old who was not impressed. It didn't help that the 5 year old exclaimed "You are eating blood" at the same time he put jam in his mouth. I think the seeds turned him off as there is quite a bit of seeds from the fruit plus the chia seeds. I might sieve off some of the seeds if I can. Edited: I couldnt sieve it and blitzing didn't help the consistency. I ended [...]

My take on Peanut Spread

My five year old loves peanut butter. I think he loves it more than he loves me sometimes! I have been eager to make my own in the tmx and today was the perfect opportunity. He loved it! "It's a 1000 billion times better than the jar one mum" was his response. Now, I've tasted it and I can say someone was exaggerating!!! Haha. I'll be honest, the store bought is nicer but the kiddies both loved this version so I'm going to keep making it. Plus its much healthier and I know what is in it. No more store bought for us for the time being. It only lasts [...]

Strawberry and Vanilla Bean Jam

This has been a big hit! Very easy to make and tastes so fresh and fruity compared to store bought jams. Other fruit such as raspberries, mixed berries or fresh apricots can be used.
