Savoury muffins are something that are so yummy but not something I make often enough. This week I have been running a lunchbox theme here on the blog and I thought it wouldn’t be complete without a delicious savoury muffin. They are a great alternative to sandwich.

These are so yummy served cut in half with some shaved ham and relish for a different spin on lunch.

Cheese and Spinach Muffins

Description

This recipe makes 9 large size muffins or 24 child size muffins.


Ingredients

Scale
  • 2 spring onions, thinly sliced
  • 320g self raising flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 250g milk
  • 60g olive oil
  • 100g grated cheddar cheese
  • 50g grated parmesan cheese
  • 20g spinach, shredded

Topping

  • 1/2 tsp ground garlic powder
  • 50g grated parmesan cheese

Instructions

Then mix like this

  1. Preheat oven to 170C. Line a muffin tray with muffin cases.
  2. Place all muffin ingredients into bowl except the spinach. Speed 4 / 5 seconds until just combined. Do not over mix.
  3. Add spinach to bowl and mix by hand with a spoon.
  4. Fill each muffin case to 3/4 full with muffin mixture.
  5. In a small bowl combine the garlic powder and parmesan cheese.
  6. Sprinkle cheese over each muffin.
  7. Bake for 25-30 minutes or until cooked through. The time may vary oven to oven.
  8. Remove tray from the oven and allow to cool on a wire rack.

Then mix like this

  3. Fill each muffin case to 3/4 full with muffin mixture.
  4. In a small bowl combine the garlic powder and parmesan cheese.
  5. Sprinkle cheese over each muffin.
  6. Bake for 25-30 minutes or until cooked through. The time may vary oven to oven.
  7. Remove tray from the oven and allow to cool on a wire rack.
