Chickpea Patties

Description

An easy vegetarian option served as is or alongside salad or in wraps.


Ingredients

Scale
  • 2 pieces of day old bread, wholemeal or seeded works well
  • 1 teaspoon parsley, or to taste
  • 20g parmesan cheese
  • 1 garlic clove, crushed
  • Half an onion, diced
  • 10g olive oil
  • 400g can of chickpeas, drained and rinsed
  • 1 egg

Instructions

  1. Add oil to frying pan.
  2. Fry the garlic and onion over medium heat until translucent and fragrant.
  3. Place bread, parmesan and parsley into food processor.
  4. Blitz until breadcrumbs form.
  5. Add remaining ingredients including the onion and garlic mix.
  6. Blitz on high speed until combined.
  7. Shape into patties and shallow fry in a frying pan. This will make 15 small patties in total.
  8. Drain well on paper towel and serve.
