Description
An easy vegetarian option served as is or alongside salad or in wraps.
Ingredients

- 2 pieces of day old bread, wholemeal or seeded works well
- 1 teaspoon parsley, or to taste
- 20g parmesan cheese
- 1 garlic clove, crushed
- Half an onion, diced
- 10g olive oil
- 400g can of chickpeas, drained and rinsed
- 1 egg
Instructions
- Add oil to frying pan.
- Fry the garlic and onion over medium heat until translucent and fragrant.
- Place bread, parmesan and parsley into food processor.
- Blitz until breadcrumbs form.
- Add remaining ingredients including the onion and garlic mix.
- Blitz on high speed until combined.
- Shape into patties and shallow fry in a frying pan. This will make 15 small patties in total.
- Drain well on paper towel and serve.
