Chocolate Chickpea Biscuits

Ingredients

Scale
  • 45g oats
  • 80g sugar of choice
  • 400g tin of chickpeas, drained and rinsed (this will weigh 250g once drained)
  • 4050g cocoa or cocao, depedning on how string you like it
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon baking powder
  • 100g butter
  • 100s & 1000s to sprinkle on top

Instructions

  1. Place oats into a food processor.
  2. Blitz for 20 seconds.
  3. Add remaining ingredients.
  4. Blitz for 30 seconds. This will be a wet mix but will be able to be formed into balls.
  5. Roll balls and place onto a lined baking tray.
  6. Flatten slightly and sprinkle with 100s and 1000s.
  7. Bake at 180 degrees for 15 minutes.
