Curried Pumpkin and Red Lentil Soup – Non TMX

Ingredients

Scale
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 1 tablespoon oil
  • 1 tablespoon mild curry powder of choice
  • 1 zucchini, diced
  • 2 carrots, diced
  • 400g pumpkin, peeled and diced
  • 90g red lentils
  • 1000mls hot water
  • ½ tablespoon vegetable stock concentrate

Instructions

  1. Place onion and garlic into a large stock pot.
  2. Add oil and curry powder and stir over a medium heat until onions are translucent and the curry powder is fragrant.
  3. Add remaining ingredients and cook over a medium heat for 25 minutes or until vegetables are cooked.
  4. Serve as is or blitz on speed 10 for 30 seconds before serving.
