Yum! An old favourite. You can also sandwich two together to make a custard yo yo biscuit (similar to a melting moment).
I find these go a little soft after day 2. Tasty nonetheless though!
Custard Cookies

Ingredients
- 180g butter, cubed
- 80g sugar
- 1 teas vanilla bean paste
- 390g self raising flour
- 75g custard powder
Instructions
- Preheat oven to 180 degrees.
- Line two baking trays with baking paper.
- Place butter into tmx bowl.
- Blitz on speed 6 for 1 minute until pale.
- Add sugar and vanilla.
- Blitz on speed 6 for 1 minute until pale.
- Add remaining ingredients and blitz on speed 4 until a dough forms. About 1 minute or so.
- Roll into small balls and place on to tray.
- Press down slightly with a fork.
- Bake for 15-20 minutes until slightly firm to touch.
- Place on wire rack to cool.
Notes
- If you find these are too crumbly I often add an egg or two to bind them or a dash of milk. The traditional recipe doesnt call for this though.

Do you have a way to make these from scratch? I don’t have custard powder but do have everything for custard.
No sorry. The powder is what makes these cookies.
I followed the recipe as above and used the right amount of custard powder however the cookies don’t taste like custard and don’t have a lot of flavour to them at all.
Do you know why this may be?
Im not sure sorry. I haven’t encountered this problem. Perhaps different brands?
