Scrolls

  We love scrolls in this house. They are my go to recipe for weekend lunches, the school lunchbox and if I've run out of bread and feel like something different. I normally chop zucchini and spinach first in the tmx and include in the dough mix to add some extra nutrition. I didn't today as I had run out of these veg. Here are our cheesymite scrolls as well as herb and cheese scrolls. They are so light and fluffy!  TIP: Slice into lengths and roll as shown below. Thank you Thermoculture for this great tip!

Caramel Condensed Milk

   This is a my version of homemade Caramel Condensed Milk that I use in baking now and for sweets and deserts. It is similar to Top n' Fill but I think much more delicious. It's luscious, creamy and thick. This is quite a thick condensed milk.  It is great in little tarts shells with some sliced banana and whipped cream or baked in tart shells until firm and drizzled with a little melted chocolate. Why not try it on my famous Lazy Caramel Slice in place of sweetened condensed milk.

Apricot Bites

We LOVE those little apricot squares you can buy in the packets at the supermarket. I'm very quickly running out of things to sell to afford them. I'm sure I could have bought a mansion with the amount of money I have spent on them in years. Ok you get the idea. They are expensive and they don't always have the best ingredients in them. Steamed Chicken Breasts with Honey Mustard Sauce

   My partner loves anything honey mustard so this is a popular dish. You can certainly cook all your veggies on the stove and double or triple the amount of chicken and sauce. Just remember when doubling you will need to increase the time by 20%. Double the sauce will be plenty though. If you want a subtle tasting sauce, reduce each mustard component by half. You can serve the chicken and sauce over rice or pasta if desired. Instructions for the stove top are below.

Marshmallow Weetbix Slice

  This Marshmallow Weetbix Slice brings back so many memories of childhood. My friends mum used to make this all the time for parties and get togethers.  I lost count how many times I went to bed with a sore tummy from eating so much of it at sleepovers. Chocolate Teeny Teddies

Join us The other day I posted my honey version of Teeny Teddies and had many requests for a chocolate version. I have played around quite a bit and finally perfected it. I wanted to maintain an egg free biscuit which I have in the recipe below. Woohoo!
