Jam Drops

Ingredients

Scale
  • 250g butter, cubed
  • 100g sugar
  • 2 teaspoons vanilla bean paste or extract
  • 360g plain flour
  • 1/4 cup jam of choice

Instructions

  1. Preheat oven to 180 degrees. Line two baking trays with baking paper.
  2. Place butter into bowl.
  3. Blitz ton speed 4 until pale. Approximately 30 secs. You may need to scrape the sides down a few times during this process.
  4. Add vanilla and sugar.
  5. Blitz on speed 4 for 1 minute.
  6. Add flour and blitz on speed 4 until a soft dough forms.
  7. Roll into 24 small balls. Place onto tray spaced apart.
  8. Using your thumb make an indent in the biscuit or the end of a wooden spoon or your tmx spatula.
  9. Place jam into a piping bag and pipe into hole. You can just spoon it in if preferred.
  10. Bake until lightly golden. Approx 18 minutes.
  11. Let cool on a cake rack.
