- 250g butter, cubed
- 100g sugar
- 2 teaspoons vanilla bean paste or extract
- 360g plain flour
- 1/4 cup jam of choice
Instructions
- Preheat oven to 180 degrees. Line two baking trays with baking paper.
- Place butter into bowl.
- Blitz ton speed 4 until pale. Approximately 30 secs. You may need to scrape the sides down a few times during this process.
- Add vanilla and sugar.
- Blitz on speed 4 for 1 minute.
- Add flour and blitz on speed 4 until a soft dough forms.
- Roll into 24 small balls. Place onto tray spaced apart.
- Using your thumb make an indent in the biscuit or the end of a wooden spoon or your tmx spatula.
- Place jam into a piping bag and pipe into hole. You can just spoon it in if preferred.
- Bake until lightly golden. Approx 18 minutes.
- Let cool on a cake rack.
